Olive Sandwich

From a

Grind up very fine
Pecan Nuts,
with either
Ripe Olives,
or Green Olives.
Add to this Mixture
a little Mayonnaise Dressing.
Use this Mixture as a
Spread for Sandwiches,
using lettuce as an additional filling or not,
as desired.
.
Of course, these Sandwiches are a little harder to take care of
than the simpler ones,
but make a change in the way of a celebration.

Inexpensive Fudge

From a
1932
recipe book

.
To 2 c. Sugar
add 1 c. Water,
3 Tbsp. Cocoa,
and a small pinch of Salt;
boil until it makes a soft ball in water.
Then add 1 Tbsp. Butter
and cool it in a bowl of water.
Add 1/2 tsp. Vanilla,
stir until creamy
and pour on a Buttered dish.

Cheese Waffles

2 c. Sifted Flour
1/2 tsp. Salt
5 Tbsp. Melted Butter
2 tsp. Baking Powder
3 Egg Yolks, {well beaten
1 1/4 c. Milk
1 c. grated American Cheese
3 Egg Whites, {stiffly beaten
.
Sift Flour, measure,
then add Baking Powder,
and Salt,
and sift again.
Combine Egg Yolks and Milk;
add Flour,
beaten until smooth,
add Butter,
and Cheese.
Fold in Egg Whites.
Bake in hot Waffle iron.

Makes five 4-section Waffles.

Tea ... (how to make)

2 c. boiling Water
3 tsp. Tea
.
Scald an earthen or china teapot
and dry it.
Put in the Tea
and pour over it the Boiling Water.
Let it stand in a warm place for 5 minutes
before serving.

Sweet Potato Pie #3

1 c. Sweet Potatoes, {mashed
1 Qt. Sweet Milk
2 Tbsp. Melted Butter
3 Eggs, {beaten
2/3 c. Sugar
some Nutmeg
some Cinnamon
.
Boil the Sweet Potatoes very soft.
Peel, mash, adding the Milk,
and put through a colander.
Have a pie-dish lined with Paste.
Beat together the Butter and Sugar.
Add the Sweet Potatoes,
a little at a time,
then the Eggs,
and Flavoring.
Fill the Paste lined tins
and bake.

This will make 2 large pies,
or 3 small pies

Raisin Candy

Prepare the Syrup;
Boil to the hard ball over a slow fire
1 lb. Granulated Sugar
in 1 pt. Water.
Stir in 1/2 tsp. Vinegar,
1 lump of Butter the size of an English Walnut.
Cover the bottom of a Buttered pan
with a layer of Raisins,
pour on this a thin layer of Syrup,
add more Raisins,
and so continue until the Candy
is of any desired thickness.
Mark in squares when nearly cold.

Biscuit Dumplings

2 c. Sifted Flour
2 tsp. Baking Powder
1 tsp. Salt
1/4 c. Shortening
3/4 c. Milk
.
Sift Flour, Baking Powder, and Salt together.
Cut in Shortening with 2 knives or pastry blender.
Add Milk,
using more if necessary to make a soft Dough.
Pat out 1/2 inch thick
and cut into 1 inch squares, strips, or diamonds.
Drop into boiling Chicken Stock.
Cover and simmer for 15 minutes.
(serves 6)

Whole Wheat
`````````````
Use 1 c. of Whole-Wheat Flour
in place of 1 of the cups of White Flour.
(using 1 c. of each)

Vegetable Chop Suey

1 c. Spaghetti
1 large Onion
1 can Tomatoes
1/2 c. Celery
1/2 c. Meat, -{fresh or left overs.

.
Boil Spaghetti in Salted Water until tender.
Drain and rinse with cold water.
Add to the remainder of Mixture,
which has been prepared in the meantime.
Put in Buttered baking dish
and bake for 30 minutes.
(Stuffed Olives are a good addition).

Serves four.

Sweet potato Bread

.
1 pt.of Cornmeal,
1 pt. Mashed Sweet Potatoes,
1/2 c. Meat chippings,
1 tsp. Baking Soda,
1 tsp. Baking Powder,
and 2 eggs.
mix well,
and bake.

Turkish Paste

From a
1932
Book
====
.
2 Tbsp. Gelatin
1/2 pt. Cold Water
1 lb. Sugar XXXX
1 grated Orange Rind
1 gill, (=1/2 c.) Orange Juice
2 tsp. Lemon Juice
some Confectioners Sugar
.
Sprinkle Gelatin into 1/2 of the Water,
then cover and let stand 2 hours.
Bring the remainder of the Water
and Sugar to boiling point,
add Gelatin,
bring to boiling point again
and simmer 20 minutes.
Remove from fire,
add Grated Rind of 1 Orange,
stir in Orange Juice,
and Lemon Juice.
Pour into a cold pan
and set in a cool place to harden.
Cut in cubes
and roll in sifted Confectioners Sugar.

Rice Waffles

1 pt. of cold-boiled Rice,
thin it with cold Milk,
beaten well,
1 Egg,
a small piece of Butter,
and Flour to make a Batter
stiff enough to Bake.

Use Pork to grease your Waffle-iron.

Snow Balls

From a

cook book

.
4 Tbsp. Butter
few drops Lemon Juice
1/2 c. Sugar
2/3 c. Milk
1 1/2 c. Pastry Flour
1/4 tsp. Salt
3 tsp. Baking Powder
2 Egg Whites
1/2 tsp. Vanilla
.
Cream the Butter,
adding a few drops of Lemon Juice
to make the Butter light colored.
Gradually add the Sugar.
Sift Flour,
Baking Powder,
and Salt
together.
Add alternately with the Milk
to cream Butter and Sugar.
Add Vanilla
and fold in
Stiffly beaten Egg Whites.
Half fill small greased cups.
Cover tightly
and steam about 30 minutes.
Serve hot with Lemon,
or any Fruit Sauce.

Baked Sturgeon

Take a piece of Sturgeon,
about 4 lbs.,
wash and parboil for 15 minutes;
then put in a pan with a little Water
and bake about an hour,
basting it with Butter occasionally.
Serve with drawn Butter.

Banana Pudding

From an
1897
cook book

.
Put 1 Qt. of Milk in a double boiler,
when brought to the boiling point
add to it 4 Eggs,
beaten with 1 c. of Sugar,
stir constantly until it begins to thicken,
and remove at once.
If allowed to stand a moment
the Custard will curdle.
If you are unfortunate enough to have it curdle,
pour in about 1 Tbsp. of cold Milk,
and beat rapidly for a few minutes
with a Dover Egg Beater.
When cool pour over thinly sliced Bananas,
in a deep dish,
ornament the top with the beaten Whites of 1 Egg
into which stir sufficient Sugar to stiffen.
Drop this from a spoon at intervals,
and place on the top of each drop of Frosting
a square 1/2 inch of Currant or Grape Jelly.

Queen of Puddings

From a
1902
cook book

.
3/4 lb. Suet
chopped and mixed with
1 Tbsp. Flour,
3/4 lb. Raisins,
3/4 lb. Currants,
3/4 lb. Sugar,
3/4 lb. Fresh Bread-Crumbs,
grated Rind of 1 Lemon,
1/4 lb. Candied Orange-Peel and Citron,
shredded,
1/2 tsp. ground Cinnamon,
1/2 tsp. Cloves,
1/2 tsp. Nutmeg,
and 1/2 tsp. Allspice.
Mix the Materials together,
and add
6 Eggs,
and 1/2 c. Brandy.
Wet a strong cloth
and dredge it with Flour,
and a little Butter;
turn the Mixture into it
and draw the cloth into a bag,
leaving enough room for the Pudding
to swell a little.
Put it into a pot of boiling water
and let it boil from 4 to 5 hours,
then turn carefully into a dish.

Escalloped Oysters

.
1 Qt. Oysters
1 c. Cracker Crumbs
1 pt. Sauce
1/2 c. Celery, (chopped)
.
For the Sauce;
.....Melt 1 tsp. Butter,
stir into it
1 Tbsp. Flour;
add
1/2 pt. Milk
and
1/2 pt. Oyster Liquor;
.
Put a layer of Oysters in the bottom of a dish;
season with
Salt & Pepper,
and a little of the Celery;
sprinkle over a little of the Cracker Crumbs;
then pour over the Sauce;
continue in this way till Materials are gone;
sprinkle a thick layer of Crumbs on the top.
Bake for 15 minutes.

Cinnamon Flop

1 c. Sugar
1 scant c. milk
2 Tbsp. Butter
2 1/2 c. Flour
3 tsp. Baking Powder
.
Cream Butter,
add Sugar,
1/2 of the Milk,
1/2 of the Flour sifted,
then the remainder of each,
then Salt,
and Baking Powder.
Mix well.
Bake in a moderate oven,
in a pan for a Sheet Cake.
.
When partly cold...
spread top with the following Icing:
1 c. Sugar
3/4 c. Butter
Cinnamon to taste
.
Cream the Butter,
add Sugar and Cinnamon.
