Corn Starch Cake

cook book

1 c. Butter
2 c. Powdered Sugar
1 c. Corn Starch
1 c. Milk
2 c. Flour
1 tsp. Baking Powder
6 Egg Whites
some Rose Water
.
Cream the Butter and Powdered Sugar.
Stir in the Corn Starch,
then add Milk, Flour, & Baking Powder.
Add Egg Whites last.

Flavor with Rose Water.

Black Cake

cook book
over 107 years old

3 lbs. Brown Sugar
3 lbs. Butter
3 lbs. Flour
28 Eggs
5 lbs. seeded Raisins
4 lbs. Dried Currants
1 lb. Citron, -{sliced
1 oz. Cinnamon
1 oz. Nutmeg
1/2 oz. Mace
1/2 oz. Cloves
1/2 oz. Allspice
1 wineglass=(4 Tbsp.) Blackberry Wine

Cream the Brown Sugar & Butter together.
Sift in the Flour.
.
Beat Eggs separately, and add,
with the Raisins, Dried Currants,
sliced Citron, Cinnamon, Nutmeg,
Mace, Cloves, and Allspice.
Then add the Blackberry Wine.
.
Mix and beat well.
.
Turn into a very large cake-mold.
Bake for 6 hours.

This Cake will keep for years.

Cream the Sugar and Butter together;
add Milk, Flour, Baking Powder,
and Egg Whites.

Mix thoroughly.

3/4 lb. Butter

1 Nutmeg
1 tsp. Baking Soda
1/2 teacup=(1/4 c.) Sour milk
sprinkling of Sugar

Cream the Butter, and add the Sugar to it.
Then add the Eggs,
(beaten separately and very light).

Grate in the Nutmeg,
then pour in the Baking Soda which is
dissolved in the Sour Milk.

Add enough Flour to make a Dough as soft as
can be handled ---- 1 Qt. =(4 c.) will
probably suffice.
.
Roll out upon a board, and cut into small cakes;
sprinkle Sugar over them,
Bake quickly.

1 1/2 tsp. powdered Cloves
1 tsp. Cinnamon
1/2 lb. Raisins
1/2 lb. Currants

Cream the Sugar & Butter;
add Strong Coffee, Flour, Baking Powder,
Powdered Cloves, Cinnamon,
Raisins, & Currants.

Mix Well.

Cinnamon Cakes

2 Eggs, ~ (whites & Yolks)
1/4 lb. Castor Sugar
2 oz. Almonds, -{pounded
1/4 oz. Powdered Cinnamon
12 Cloves, -{pounded
1/2 lb. fine Flour

Use the Whites & Yolks of Eggs,
which are to be beaten up with
the Castor Sugar for 1/2 hour.
.
Add Pounded Almonds,
Powdered Cinnamon,
and Pounded Cloves.
.
Stir into this mixture, very gradually,
the fine Flour.
.
Roll out into long strips and divide into cakes,
Bake in Buttered tins

New Year's Cake

NEW YEAR'S
Special

1 1/2 lb. Butter
1 1/2 lb. Powdered Sugar
15 Eggs, -{beaten
1 1/2 lb. Flour, -{sifted
3 tsp. Baking Powder
2 Lemons, -{grated
1/2 teacup = (1/4 c.) Molasses
2 lbs. Almonds, -{finely chopped
2 lbs. raisins
1 lb. Citron, -{sliced
.
Cream the butter and Powdered Sugar;
beat well together.
.
Beat 15 Eggs, and add...
along with Flour, & Baking Powder.
.
Grate Lemons into the Molasses,
and to the Batter.
then add the Almonds, Raisins,
& sliced Citron.
Mix together thoroughly.
.
Turn in a cake mold,
Bake 2 hours in a moderate oven.

Buttermilk Biscuits

3 c. Buttermilk
1 c. Butter
1 tsp. Baking Powder
sufficient Salt
some Flour

Mix the first four ingredients together,
add just enough Flour to make the dough
stiff enough to admit of being rolled out into Biscuits.

Royal Biscuits

Cook Book

Butter a cake pan
and dust it with Flour.
.
2 c. Flour
1 tsp. (heaping) Baking Powder
1/2 tsp. Salt
1 tsp. Sugar
1 oz. Pure Lard
1 c. cold Milk
some melted Butter
.
Put Flour into a sieve,
add Baking Powder, Salt, & Sugar...
then sift it all into a bowl.
Add Lard...
chop up the Lard fine, in the Flour
with a table knife,
then make a hollow in the centre.
Pour in the cold Milk,
mix with the same knife into a smooth dough.
.
Sprinkle a little flour on a pastry - board,
turn the Dough on to it,
pat it lightly with the knife to smooth the top.
.
Roll out the Dough to a one inch thickness.
Dip a small Biscuit - Cutter in Flour and cut the Dough.
Lay them in the Buttered pan close together;
brush the Biscuits over with melted Butter.
.
Place them in a hot oven,
Bake 12 to 15 minutes.
.
When done, remove the Biscuits...
separate them, and serve them enclosed in a napkin,
on a hot plate.

1/2 lb. Flour
1/2 lb. Sugar
1 dessert spoon (1 1/2 tsp.) Rice Flour

First Mix the dry ingredients together;
then work in the Butter.

Form a rather stiff paste,
roll out in cakes or cake,
about 1/2 inch thick.
Prick all over top with a fork and decorate edges.

Bake until a pale brown all over,
and done right through.

Baking Powder Biscuits

3/4 c. Milk
2 Eggs
1/2 c. Butter
1 tsp. Sugar
2 1/2 tsp. Baking Powder
some Flour

Mix Milk, Eggs, Butter, Sugar,
& Baking Powder;
add just enough Flour to make a stiff Batter.

Fill your pans or rings 1/2 full.
.
Bake in medium oven until done.
(about 350 )

Sour Dough Pancakes

1 1/2 pt. Sour Milk, ~ (or souring Cream)
1 tsp. Baking Soda
4 large Eggs, -{beaten separately
4 Tbsp. Butter
a little Salt

Mix together;
Flour, Sour Milk, & Baking Soda.

Beat Eggs separately, and add.
Then add;
the Butter, & Salt.
.
Beat all well together.

French Pancakes

a cook book,

4 Egg Yolks
1 lb. Flour
1 glass Brandy, = (1/4 c.)

an equal amount of good Ale & Water
pieces of Butter, ~ the size of a walnut


. Lemon, -{optional
Ginger Sauce, -{optional
Spiced Sugar, -{optional

Beat Egg Yolks well,
then mix into 1 lb. of Flour.

Add Brandy.

With an equal quantity of good Ale & Water,
dilute the paste until it is of the consistency of cream.

.
Let this remain for 2 hours before using.

Put a piece of Butter as large as a walnut
into a hot frying pan.

Put in enough Batter to cover the bottom of pan.

When nicely browned on one side,
turn it over.

As soon as it is done...
serve it with;
Lemon,
Ginger Sauce,
or
Spiced Sugar apart.

Put in another piece of Butter for each,
and every succeeding Pancake that you fry.

German Waffles

1/2 lb. Butter
5 Egg Yolks
1/2 lb. Flour, {= 1- 2/3 c.)
1/2 pt. Milk, {=1 c.)
5 Egg Whites

.
Stir Butter to a Cream,
add Egg Yolks mixed with Flour.

Adding Milk gradually stirred in,
and lastly;
the Egg Whites, whipped to a stiff froth and
beaten into the Butter.

.
Very rich and delicious.

Rice Pancakes

1 pt. = {2 c.} Flour

1 tsp. Baking Soda

1 piece of Butter the size of a walnut.

Mix thoroughly...
fry as you normally would.
