Sweet Potato Pie

Allow one large Sweet Potato for every Pie.

Boil until done; then remove the skin.
Mash thoroughly, adding a piece of Butter the size of a walnut,
and enough Milk to make it run through a colander without much difficulty.

When cold, add Yolks of 2 Eggs, ~ well beaten,
Sugar, to fit taste,
a little Cinnamon,
a little Nutmeg,
about 2 tsp. Brandy,
& beaten Whites of the Egg.
Line a Pie Pan with Pie Crust Dough,
pour in the mixture,
Bake at 350 for about 30 minutes.

Soda Cracker Pie

14 Soda Crackers ~ (crushed fine with a rolling pin)
3 Egg Whites ~ (beaten stiff)
1 c. Sugar
1/2 c. Walnuts ~ (chopped)
1/2 tsp. Baking Powder
1 1/2 tsp. Vanilla
Beat Egg Whites until stiff.
Fold in Crackers, Nuts, & Baking Powder.
Bake in well greased 9 inch pie pan ...
at 350 for 30 minutes.
Topping.....
Beat 1 c. Whipping Cream until stiff.
Fold in 1 box of Frozen Strawberries, ~ well drained.
Spread over top of Pie & refrigerate 4 hours or more.
Enjoy!

Shoofly Pie

Use Pastry for one Pie Crust
Filling:
2/3 c. boiling Water
1/2 tsp. Baking Soda
1/2 c. Molasses
Mix the above.
Preheat oven to 350
Prepare Pastry...
fit into a 9 inch pie pan, making a high fluted edge; >> Do Not Bake!
Crumb Topping:
1 1/2 c. Sifted Flour
1/4 tsp. Salt
3/4 c. firmly packed Brown Sugar
1/3 c. Butter... or Margarine... or Crisco
Also mix together;
Flour, Salt, and Brown Sugar, then add Butter.
Mix until the texture is like meal.
Evenly sprinkle about 1/2 c. of topping into Pie Shell.
Pour in Filling, &
sprinkle on evenly, the remaining Crumb Topping.
Set in oven.
Bake at 350 until done.

Rhubarb Pie Delux

2 c. Rhubarb
1 c. Sugar
2 Egg Yolks ... >> {save Egg Whites for Meringue
1 lump Butter ~ (about 2 Tbsp.)
1 Tbsp. Flour

Bake Pie Shell and set aside.
Mix all the above & cook slowly,
until very thick, (like jelly).
Pour mixture into Pie shell.
Make, and top with Meringue.

Raspberry Velvet Pie

1 pkg. Frozen Raspberries
1 pkg. Raspberry Jello
1 c. Hot Water
16 Marshmallows
1 c. Cream ~ Whipped
Vanilla Wafers
Drain Raspberries, (save syrup).
Add enough Water to Syrup to make 1 c.
Dissolve Jello in Hot Water & add Marshmallows.
Stir until partially mixed. Add Syrup.
Chill until partially set.
Beat until fluffy.
Fold in Raspberries & Whipped Cream.
Pour into a pie pan, lined with Vanilla Wafers.
ALLOW TO SET

Tangy Jello Salad

6 oz. pkg. Orange jello....... >> 2 c. boiling Water
6 oz. can Frozen Orange Juice
1 c. Crushed Pineapple, ~ undrained
11 oz. can Mandarin Oranges, ~ drained

Dissolve Jello in boiling Water;
add Orange Juice,
Pineapple, & Oranges.
Pour into a flat dish.
Chill until firm.
Topping:
1 pkg. Dream Whip,
1 pkg. Instant Lemon Pudding mix.
Prepare both according to package directions.
Fold together.
Spread on top of Jello... Chill.

Pumpkin Pie Special

Makes 2 Pies

Made from scratch

1 1/2 pts. Home canned Pumpkin, ~ {or partially boil fresh Pumpkin,
to soften slightly.
Put in large mixing bowl and add;
1/4 lb. Real Butter ~ softened
1 can Evaporated Milk, & 1/2 of the empty milk can... 1/2 & 1/2 Milk.
Separate 3 Eggs, ~ Beat the Yolks & Whites separately.
Add to Pumpkin mixture.
Then add the following.......
1 1/4 c. Sugar
2 1/2 tsp. Cinnamon
1 1/2 tsp. Ginger
1 1/2 tsp. Pumpkin Pie Spice
1/2 tsp. Ground Allspice
1 1/2 tsp. Ground Cloves
1/2 tsp. Salt
3/4 oz. (3/4 shot) Brandy ~ {optional

(my secret ingredient)
Mix all together,
with electric mixer.
Preheat oven to 350
While oven is preheating,....
Reheat Pumpkin mixture in microwave, until it starts to thicken.
( Maybe 5 or 6 minutes ). Watch it closely.
Next....
Fill 2 deep dish Pie Shells equally, with the thickened Pie Filling, while
it is still very hot, and instantly put in oven, on a cookie sheet.
Bake for about 50 to 60 minutes, or until done.
Time may vary.
Let it cool some, before eating.

Nutty Pie Crust

1 c. Sifted Flour
3/8 tsp. Baking Powder
1/2 tsp. Salt
Sift Flour, Baking Powder, & Salt together.
Cut in Shortening to resemble Coarse Meal.
Add;
Chopped Nuts (of your choice) and Water.
Roll out to fit Pie tin.
Bake in Hot oven!

Common, Home Made Pie Crust


Makes 2 Crusts
Sift together....
2 c. Flour, &
1 1/2 tsp. Salt
Cut in 3/4 c. Lard ~ -{ or maybe Shortening.
Add; approximately 1/3 c. Ice (H2O) and mix gently.
Let dough stand for 10 to 15 minutes,
then divide and roll out.

Pumpkin Cream Pie with Merangue

3/4 c. Sugar
2 Tbsp. Corn Starch
2 tsp. Pumpkin Pie Spices ~ (any preferred)
1 Egg Yolk
1 c. Cooked Pumpkin....-{NOT a can of Pie Filling
2 c. Milk


Mix:
Sugar,
Corn Starch, and
Spices.
Add;
Egg Yolk,
Pumpkin, and
Milk.
Cook until thickened, stirring constantly.
Pour into prebaked Pie Crust.
Cover with Meringue,
Bake .... just until done, do not over Bake.

Onion Stuffed Acorn Squash

2 medium Acorn Squash
1o oz. pkg. Frozen Tiny Onions in Cream Sauce
1 c. (4 oz.) shredded sharp process American Cheese
1 c. soft Bread Crumbs -{1 1/4 slices of Bread)
2 Tbsp. melted Butter
2 Tbsp. Snipped Parsley

Clean out Squash.
Put cut side down in shallow pan.
Bake at 350 for 35 to 40 minutes.
Meanwhile...
cook Onions according to pkg. directions.
Stir in Cheese until melted.
Turn Squash cut side up;
sprinkle with a little Salt.
Spoon in Onion mixture.
Combine Crumbs & Parsley;
toss with melted Butter.
Sprinkle over Onions.
Bake 15 to 20 minutes more.
Makes about 4 servings.

Lemon Powdered Sugar Frosting

Mix together:
2 c. Powdered Sugar, adding only a very small amount of
Milk at one time, ~ (about 1 Tbsp.)
1 Tbsp. Melted Butter
1 tsp. Vanilla
1 Tbsp. Milk
Lemon Extract... {amount to fit your taste.
If Frosting gets to thin, just add a little bit of Powdered Sugar.

Powdered Sugar Frosting

Mix together:
2 c. Powdered Sugar, adding only a very small amount of Milk, at a time.
(about 1 Tbsp.)
1 Tbsp. melted Butter
1 tsp. Vanilla
1Tbsp. Milk
If Frosting gets a little to thin...
just add a little bit of Powdered Sugar.

Toffee Cookie Bars

Put Graham Crackers { about 10
on small,
Buttered Cookie sheet .
Melt:
1c. Butter ~ (or Margarine) &
1 c. Brown Sugar together.
Boil 2 minutes.
Pour over Crackers &
sprinkle with nuts;
(I use Slivered Almonds)
Bake at 350 for 8 minutes.
Remove from oven & cover with Hershey Bars while still hot.
Use 6 or 7 Bars, & then spread out evenly, as they melt.
Cool in refrigerator ~ stays crisp in frig.

Special K Bars

1 c. Sugar
1 c. Karo Syrup
Bring Sugar & Syrup to a boil.
Then add...
1 c. Crunchy Peanut Butter to Syrup mixture.
Then;
mix with Special K cereal, & spread on small, greased jelly roll pan.
Note:
For thicker Bars, in a 9 X 13 inch pan....
Top with 6 oz. of melted Chocolate Chips.
Butterscotch Chips may also be used... {optional.

Pecan Pie

one 9 inch unbaked Pie Shell.
3 Eggs ~ at room temperature.
1 c. Brown Sugar ~ firmly packed
1 c. Light Corn Syrup
1 tsp. Vanilla
1 Tbsp. Melted Butter, -{or Margarine
1 c. Pecans ~ Coarsely chopped
Preheat oven to 350
Prepare Pie Crust,
and refrigerate.
In a large bowl, beat Eggs slightly
with a wire whip.
Add:
Sugar, Syrup, & Vanilla.
Beat with wire whip, just enough to
break up any clumps of Sugar.
Stir in:
Butter & Nuts.
Then turn mixture into Pie Shell.
Bake 55 to 60 minutes,
or until center is set.
Serve at room temperature
Also good with Whipped Cream,
or with Ice Cream.

Peach Pie

Cook together until thick.
1 c. Sugar
3 Tbsp. Corn Starch
1 c. Water
1 c. Peaches ~ cut up
Add;
2 tsp. Butter, and
1 tsp. Lemon Juice.
Cool, & add another.....
3 c. Peaches ~ cut up.
Put in baked Pie crust....
Serve with Whipped Cream.

Sour Cream & Raisin Bars

Cook 2 c. Raisins in small amount of Water for 10 minutes. Drain & cool.
Crust:
1 c. Brown Sugar
1 c. Butter
1 1/2 c. Oatmeal
1 tsp. Baking Soda
1 3/4 c. Flour
Cream Sugar & Butter,
add Oatmeal, Baking Soda, & Flour.
Put 1/2 of mixture in a 9 X 13 inch pan.
Bake for 7 minutes.
Cook:
3 Egg Yolks
1 1/2 c. Sour Cream
1 c. Sugar
2 1/2 Tbsp. Corn Starch
Boil, stirring constantly....
add Raisins, & 1 tsp. Vanilla.
Pour over baked crust,
and crumble remaining
crust over this.
Bake for 30 minutes, at 350
Eat....

Reese Bars

Mix:
1 c. Margarine ~ (melted)
2 1/2 c. Powdered Sugar
2 c. Crushed Graham Crackers
1 c. Peanut Butter
Pat good in a 9 X 13 inch pan.
Melt 12 oz. Chocolate Chips with
heaping Tbsp. Butter & spread over the above mixture.
Cool and cut
into small pieces, before it gets to hard.

Raisin Bars

1 3/4 c. Oatmeal
1 3/4 c. Flour
1 c. Brown Sugar
1 tsp. Baking Soda
1 c. Butter
Mix the above and pat 2/3 in bottom of a 9 X 13 inch pan.
Bake 15 minutes at 350
Cook 2 c. Raisins, 1/2 c. Water, & a pinch of Salt.
Add 4 Egg Yolks ~ (beaten a little),
1 c. Sugar,
2 c. of 1/2 & 1/2 Milk,
3 Tbsp. Corn Starch.
Boil 5 minutes.
Put on top Crust. Top with remaining crumbs.
Bake 20 minutes, at 350
Can be used as a dessert
Tastes like Sour Cream Pie.

Peach Cream Pie

6 or 7 Peach halves
1/3 c. Sugar
1 Tbsp. Flour
1/4 tsp. Salt
1 c. Milk
2 Egg Yolks ~ beaten
1 Tbsp. Melted Butter
2 Egg Whites ~ stiffly beaten


Arrange Peach halves,
with cut side down ,
in a pie crust.
Mix Sugar, Flour, & Salt...
Combine the Milk, Egg Yolks, & Melted Butter, then
add to dry ingredients, and beat smooth.
Fold in Egg Whites.
Pour over Peach halves.
Bake in hot oven for 10 minutes....
Then in moderate oven for 30 to 35 minutes...
Or until mixture in centre of Pie dose not stick to knife.

Peanut Butter Rice Krispy Bars

3 c. Rice Krispies
1 c. Salted Peanuts
1/2 c. Sugar
1/2 c. light Corn Syrup
1/2 tsp. Vanilla
1/2 c. Peanut Butter
Mix the Rice Krispies and Peanuts together.
Combine Sugar & Corn Syrup, and
cook, stirring constantly,
until mixture comes to a full rolling boil.
Remove from heat.
Stir in Peanut Butter, and Vanilla.
Immediately pour over Rice Krispy mixture,
stirring gently to coat.
Pat into a Buttered 8 X 8 X 2 inch pan.
Cool, then cut into 2 inch Bars.

Plum Pudding

1 c. Tapioca soaked over night in 1 Qt. Cold Water
1 Qt. Blue Plums
1 c. Sugar
1 tsp. Vanilla
a little Salt
cook Tapioca until clear;
let Plums heat thoroughly...
and then add Sugar;
take off fire and add Vanilla,
then mix with the Tapioca.
Put in baking dish and Bake 1/2 hour....
cover with a Meringue and brown delicately;
Serve with Whipped Cream.

Tomato Soy Catsup

( an old Southern recipe)
Take 1 bushel of ripe Tomatoes;
cut them in slices and skin.
Sprinkle the bottom of a large tub with Salt,
put in a layer of Tomatoes, more Salt and Tomatoes.
Repeat, until all are in the tub.
Cover the top with sliced Onions.
Let stand 3 days.
Then put into a large kettle,
and boil slowly for 8 hours; stir occasionally,
to prevent the Tomatoes from sticking.
Take off the fire and let set to cool over night.
Press through a coarse wire sieve, and add
1 oz. of Ground Cloves
2 oz. of Allspice
2 oz. of Black Pepper
2 oz. of Ground Mace, & Cinnamon mixed.
Let boil slowly for 4 hours.
Let cool, put into glass jars, and seal.
This Soy is excellent for seasoning
Sauces and Gravies.

Red Pepper Catsup

Take 4 dozen pods of RED pepper, put in a preserve-kettle

with a pint of strong Vinegar and 1 Qt. Water;

set on the fire and let come to a boil;

add 2 roots of grated horseradish,

6 sliced Onions,

1 dozen Whole Cloves, &

1 oz. White Mustard-seed.

Let boil 10 minutes longer,

then strain.

Put back in the kettle with

a teacupful -{1/2 cup)

of Brown Sugar,

2 oz. Celery seed, &

1 Qt. of Strong Vinegar.

Boil for 1 hour,

then bottle.




This Catsup will keep for any length of time.

Nut Goody Bars

Melt:
1 pkg. Chocolate Chips
and
1 pkg. Butterscotch Chips
and
1/2 c. Butter
and
1 c. Chunky Peanut Butter
Cook until all is melted....
or use microwave oven to melt it.
butter a cookie sheet,
or a 9 X 13 inch pan.
Put 1 pkg. miniature Marshmallows in pan.
Pour on the melted mixture,
and let cool.
Cut into Bars.... ENJOY.

Great Sugar Cookies

1/2 c. Sugar
1/2 c. Powdered Sugar
1/2 c. Real Butter
1/2 c. Cooking Oil
1 Egg ~ well beaten
1 tsp. Vanilla ~ (or almond extract)
1/2 tsp. Baking Soda
1/2 tsp. Cream of Tartar
2 c. + 1 Tbsp. Flour
pinch Salt

Mix together in the order given.
Then let cool in refrigerator for 2 hours.
Roll dough into small balls.
Roll the balls in some Sugar.
Place on cookie sheet, & press them flat with a glass.
Bake at 350 for 10 to 12 minutes.

Anyone Can Make It Pie

What is so hard about it?
First:
Buy a frozen Pie Crust.
Second:
Buy a can of Pie Filling. { Blueberry, or Chery, etc.
Third:
Follow the directions:
As you combine the two above.
Yes, Pie!
Once, some years back, my church was going to have a bake sale.
No one knew who baked what, and the church set the price on everything.
Just out of curiosity in what would happen, I went out and did as it
states above.
To my surprise.... my cherry pie was one of the first items to sell,
and I hardly had to do much of anything to make it.
It was that easy!
Yes, it's true... it really happened that way.

Raspberry leaf Tea

To make your own:
First find some Raspberry bushes,
...Wild, or Tame,
Red, or Black.
When the leaves are nice & green, in the spring,
pick some and let them dry.
To speed things up, use a food dehydrator,
or as I do....
In this way: ...
Place leaves on cookie sheet, apart from each other,
set in oven at the lowest heat possible,
and leaving the oven door open.
Keep a very close watch on them.
When completely dry, & crispy, remove from oven.
Very carefully pick up the dry leaves, one at a time,
& crinkle them up in a large mouth pint canning jar,
or any other air tight container.
Your tea is ready for use.

No Bake Chocolate Bars

1/2 c. PLUS 1 Tbsp. Butter
1/2 c. Sugar
5 Tbsp. Cocoa
1 tsp. Vanilla
1 Egg
2 c. Vanilla Wafer CRUMBS.
1/2 c. Finely Chopped Almonds
3/4 c. Shredded Coconut
12 c. Butter ~ softened
1 3/4 c. Powdered Sugar
3 Egg Yolks
3 oz. Semi-sweet Chocolate Morsels, ~ { partially melted & cooled
1 tsp. Vanilla
Place 1/2 c. PLUS 1 Tbsp. Butter, and Cocoa,
1 tsp. Vanilla, and 1 Egg...
all in the top of a double boiler;
cook over simmering water,
stirring until Butter melts.
Mix in Water, the Crumbs, Chopped Almonds,
and Coconut.
Press firmly in ungreased 10 X 15 1/2 inch pan. Refrigerate until firm... about {2 hours.
Mix 1/2 c. softened Butter,
Sugar, Egg Yolks, Chocolate,
and Vanilla, in a large bowl until smooth.
Refrigerate until firm.
(about 2 hours).

Graham Cracker Bars

Melt 1/2 c. Butter in a 9 X 13 inch pan.
Line with Graham Crackers.
Sprinkle a 6 oz. pack of Chocolate Chips,
a 6 oz. pack of Butterscotch Chips,
1 c. Coconut, and
1/2 c. Chopped Nuts over top of the Crackers.
Pour a can of Eagle Brand Milk over all of it.
Bake at 350
Be sure it is plenty done on sides,
to be sure middle is done.

White Nut Bread

3 c. Sifted Flour
4 tsp. Baking Powder
1 tsp. Salt
3/4 c. Sugar
3/4 c. Chopped walnuts ~ or Chopped Pecans
1 Large Egg
1 1/2 c. Milk
2 Tbsp. Melted Shortening

Sift Flour, Salt, Baking Powder,
and Sugar.
Add Chopped Nuts.
Beat Egg, and add to Milk.
Add shortening last.
MIX WELL.
Let stand for 20 minutes, at room temperature.
Bake about 70 minutes,
in moderate oven.

Nut Bread

2 c. Flour
1/2 tsp. Baking Soda ~ (scant)
1 1/2 tsp. Baking Powder
1/4 tsp. Salt
1/2 c. Sugar
1 c. Thin Sour Cream
1/8 c. Milk
1 Egg
1/2 c. Nut Meats
Mix dry ingredients together.
Beat Egg & add to Cream.
Then stir into dry ingredients.
Add Milk.
Raisins or Dates may also be added,
if desired,... {optional.
Put in slow oven,
and Bake for 1 hour. Gradually increasing the heat.

Sweet Coffee Cake

Topping:
1/2 tsp. Cinnamon
1/2 c. Chopped Pecans
2 Tbsp. Brown Sugar
1 c. Margarine
2 c. Sugar, ~ {or a little less
2 Eggs
1 c. Sour Cream ~ (lite)
1/2 tsp. Vanilla
2 c. Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/8 tsp. Salt
Cream Margarine, Sugar, & Eggs.
Fold in Sour Cream & Vanilla, very carefully; (by hand).
Add sifted dry ingredients.
Put 1/2 of this mixture into greased, and Floured 10 inch Bunt Cake Pan.
Sprinkle with 1/2 of Topping.
Repeat...
Bake at 350 for 50 to 60 minutes.
Cool, before removing from pan. Then sprinkle with Powdered Sugar.

Red Devil's Food Cake


1/2 c. Shortening
1 1/2 c. Sugar
1 Egg
4 Tbsp. Cocoa
1 tsp. Red Food Coloring
2 Tbsp. Hot Coffee
2 c. Flour
1 tsp. Salt
1 tsp. Baking Soda
1 c. Buttermilk, ~ or Sour Milk can be used
1 tsp. Vanilla


Cream Sugar and Shortening,
add Vanilla, and unbeaten Egg.
Mix well.
Add Red Food coloring.
Then add sifted, dry ingredients alternately with
the 1 c. Buttermilk.
Add the Coffee and beat well again.
Bake in moderate oven for about 30 minutes.

Orange Cake

2 c. Sugar
1/2 c. Butter
4 Egg Yolks
2 Egg Whites
1 Orange ~ (grated Rhine & juice)


Put Juice of Orange in a cup and;
add enough cold water to make 1 full cup.
Cream the Sugar, & Butter together.
Add Egg Yolks....
Then add the grated Rhine, juice, & water.
Mix in the dry ingredients, below.
Sift together:
3 c. Flour
Pinch of Salt
2 tsp. Baking Powder
Add Whites of Egg, last.....
Whip Egg Whites,
fold them into the rest... very gently.
Bake at 350 until done.

Norwegian Crumb Cake

2 1/2 c. Sifted Cake Flour
2 c. Brown Sugar
1/2 c. Softened Butter


Mix well with hands, and remove 3/4 for topping.
To the remainder, add:
1 Beaten Egg
3/4 c. Sour Milk ~ ... (Butter Milk may be used)
1 tsp. Cinnamon
1/2 tsp. Baking Soda
Beat hard, until smooth.
Pour batter into greased pan.
Sprinkle topping over Cake.
Bake at a moderate temperature to start,
then increase heat towards end of baking.

Low Sugar CHOCOLATE CAKE

1 3/4 c. Cake Flour
1 1/2 tsp. Baking Soda
1/2 tsp. Salt
1/2 c. Butter
1 tsp. Vanilla
4 Tbsp. Sugar
1 c. Light Corn Syrup
2 Egg Yolks ~ (unbeaten)
2 squares Chocolate ~ (melted)
2/3 c. Milk
2 Egg Whites ~ (beaten stiff)

Sift dry ingredients}- Flour, Soda, & Salt.
Cream shortening & Sugar.
Add Syrup, gradually, and beat well.
Add about 1/4 of the Flour.
Beat until smooth.
Add Egg Yolks ~ one at a time.... beat well.
Add remaining Flour in 1/3's alternately,
with Milk in 1/2's.
Add Vanilla.
Fold in the stiffly beaten Egg Whites.
Pour into a cake pan & Bake at 350 for 25 to 35 minutes.

Rabbit Chow Mein

1 Medium size Rabbit
1 lb. Pork Steak
1 Green Pepper ~ chopped
1 Onion ~ chopped
6 Celery Stalks ~ chopped
2 cans Bean Sprouts
1 can Mushrooms
1 Tbsp. Flour
1 Tbsp. Soy Sauce


Cut up Rabbit & remove meat from bones....
Cut into small pieces.
Cut Pork into small, narrow chips.
Put Pork in hot pan, & brown.
Add Rabbit, & brown.
Remove meat, to large sauce pan.
Add Green Pepper, Onion, & Celery.
Cook over slow fire until done.
Add Bean Sprouts, & cook another 1/2 hour.
Add Mushrooms.
Thicken with Flour,
and add Soy Sauce.
Serve with Rice and Noodles.

ROAST PHEASANT in sour cream

2 Pheasants, cut into serving pieces
Flour
Salt & Pepper
Paprika
Butter
1 c. Sour Cream
1 c. Milk
7 oz. can Mushrooms
1 tsp. Onion Powder
1 tsp. Celery Salt
1 Tbsp. Chopped Parsley
1 Pimento, ~ chopped

Dredge Pheasant in Flour.
Sprinkle with Salt, Pepper, & Paprika.
Brown in Butter in skillet.
Place in Buttered casserole dish.
Stir Flour into pan drippings;
blend in Sour Cream and Milk.
Add remaining ingredients.
Pour over Pheasant.
Cover and bake at 325 for 1 hour.

Deer Meat Balls

2 slices Rye Bread, ~ broken up
2 slices White Bread, ~ broken up
2/3 c. Milk
2 tsp. Baking Powder
1 1/2 lb. ground Deer
1/3 c. Chopped Onion
1 tsp. Salt
1/2 tsp. Seasoning Salt
some Grease~ or fat
1 can Cream of Mushroom Soup
1 large can Evaporated Milk
1 c. Potato Chips, ~ crushed

Combine the Breads, Milk, & Baking Powder in
a large mixing bowl.
Let stand for a few minutes.
Add Meat, Onion, Salt, & Seasoning Salt.
Mix Well.
Form Meat into Balls.
Brown in a small amount of Grease, ~ (or fat).
Place in a baking dish; cover with
Soup diluted with Milk.
Top with Crushed Potato Chips.
Bake at 350 for about 45 Minutes.

Irish Chocolate Cake

From an Old
Railway Employee Journal
1 c. Butter
2 c. Sugar
Cream together well.
Add:
4 Egg Yolks ~ beaten
1/2 c. Melted Chocolate, ~ (about 4 squares)
1 c. Hot Mashed Potatoes
Measure:
2 c. Flour ~ (reserve 1/4 c.)...resift the rest with.....
3 tsp. Baking Powder
1/4 tsp. nutmeg
1/2 tsp. Salt
Add this Flour mixture to batter,
alternately with 1 c. Milk.
Fold in 1 c. chopped Nuts, which has been mixed with
the 1/4 c. reserved Flour.
Add 4 stiffly beaten Egg Whites.
Pour into greased & Floured cake pans.
Bake at 375 for about 20 minutes.

Coffee Cake

1 1/2 c. Flour
1 1/2 c. Baking Powder
1/4 c. Sugar
1/4 tsp. Salt
4 Tbsp. Butter
1 Egg
2/3 c. Milk

Sift together Flour, Baking Powder, Sugar, & Salt....
Cut in Butter.
Blend in 1 beaten Egg & Milk}- combined.
Beat vigorously, & thoroughly.
Pour into greased tin,
and evenly sprinkle with topping.
TOPPING:
1/2 c. Brown Sugar
1 1/2 c. Cinnamon
Bake 30 to 40 minutes in moderate oven.

MOCK APPLE PIE

From the
RITZ Cracker Box
Pastry for two Pie Crusts
36 RITZ Crackers
2 c. Water
2 c. Sugar
2 tsp. Cream of Tartar
2 Tbsp. Lemon Juice
1 Grated rine of Lemon
2 Tbsp. Blue Bonnet spread
!/2 tsp. Ground Cinnamon
NO APPLES NEEDED
Place Crackers in unbaked Pie Crust.
In sauce pan, over high heat;
mix & heat Water, Sugar, and Cream of Tartar to a boil.
Let simmer for 15 minutes.
Add Lemon Juice, and rine; ~ let cool.
Pour this syrup over Crackers, in Pie Shell.
Dot with Blue Bonnet Spread.
Sprinkle with Cinnamon.
Place remaining pastry on top, for top Crust.
Trim, seal, and flute edges.
Slit top Crust to let steam escape.
Bake at 425 for 30 to 35 minutes, or until Crust is crisp, and golden.
Cool completely.

Sweet potato - Raisin Patties

4 medium - size cooked Sweet potatoes
1 Egg
1/2 tsp. Salt
3 Tbsp. Flour, ~ (if needed)
1/2 c. Raisins


Mash Sweet potatoes.
Beat in Egg & Salt.
Add Flour only if Sweet potatoes are wet.
Mix in Raisins.
Drop mixture from a tablespoon on heated,
greased fry pan.
Brown slowly on both sides.
Makes about 12 patties.

Impossible Pie

4 Eggs
1/2 stick Butter
1 c. Sugar
1/2 c. Flour
1/4 tsp. Salt
1/2 tsp. Baking Powder
2 c. Milk
1 c. Coconut
1 tsp. Vanilla
Blend all ingredients together in a blender,
(or electric mixer),until foamy.
Pour into a 10 inch Pie Pan.
Bake 1 hour at 350 , or until done.

German Chocolate Pie

Whip 2 Egg Whites until frothy,
add 1/8 tsp. Salt, &
1/8 tsp. Cream of tartar.
Whip until frothy, then add...
1/2 c. Sugar.... a little at a time, until real stiff, then add...
1/2 c. Nuts
Pile in slightly greased pie pan.
Shape it like a Pie Crust.
Bake at 275 for 1 hour, 10 minutes ~ (70 minutes).
Filling:
Melt 1 bar of German Chocolate, with 3 Tbsp. Water, over low heat.
Set aside until cool.
Add 1 tsp. Vanilla
Mix well & fold into 1 c. Whipped Cream.
Put into Pie Crust.
Refrigerate at least 4 hours.
Over night is best.

Fresh Blueberry Pie

2 c. Blueberries
1 1/4 c. Sugar
2 1/2 to 3 Tbsp. Corn Starch ~ (I use 3 Tbsp.)
1 Tbsp. Water
Boil until thick,stirring constantly.
Add juice of 1/2 Lemon & cool.
Fold in 2 c. Raw Blueberries.
Pour into BAKED Pie Shell.
Bake pie at 350 until done.
Serve with whipped cream, or ice cream.
I think ice cream tastes the best with it.
NOTE:
This will be very dry when you first start it,
but as the Blueberries get warm, they give
off enough juice.
In fact, when I wash them, I also dry them between
paper towels as good as I can, so as to not get
any moreWater than the 1 Tbsp.

Pumpkin Pie to go

Makes 4 Pies
Clean & peal 1 Qt. Raw Pumpkin.
Cut into 1 or 2 inch chunks.
put in small presure cooker, with about 1 to 1 1/2 inches of water.
Cook for about 5 or 10 minutes, or until Pumpkin is fairly soft.
Drain Pumpkin well, of all water.
Mash, adding 1/8 lb. real Butter ~
(1/2 stick) ~ while still warm.
After mashing, put in blender on low,
for a short time.
Put Pumpkin in extra large mixing bowl.
Add 2 cans of Evaporated Milk, and
1/2 of an emty can Milk.
Add 4 Eggs ( Whites & Yolks beat separately).
Then add 2 c. Sugar
4 Tsp. Cinnamon
1/2 tsp. Ginger
2 tsp. Alspice ~ (or pumpkin pie spice)
2 tsp. Crushed Cloves
2 tsp. Salt
Mix well,with electrc mixer.
Add 1 shot (1 oz.) of Brandy,
to bring out the flavor.
Preheat oven to 350
While oven is preheating...
heat Pumpkin mixture until it thickens.
Fill Pie Crusts with thickened Pie Filling,
while still hot and instantly put into oven, on cookie sheets
Bake 40 to 45 minutes
Let Cool.

Carrot Cake

2 c. Sugar
2 c. Flour
2 tsp. Cinnamon
2 tsp. Baking Soda
4 Eggs ~ beaten
8 oz. can Crushed Pineapple ~ (with juice)
1 1/4 c. Cooking Oil
2 tsp. Vanilla
1 tsp. Salt
3 c. Carrots ~ grated
1 cup Pecans ~ chopped
1 c. Flaked Coconut
Mix together well.
Bake at 350 until done.

Deep Dish Strawberry - Rhubarb Pie

Clean & cut up 2 1/2 c. Rhubarb,and put in a large kettle.
Add Water so it almost covers, the Rhubarb, (but dosen't).
Set on stove & heat up.
Start adding Sugar ~ to fit your own taste.
Keep stirring it until it comes to a boil, ~ take off the heat.
Cut up 2 c. of Strawberries, put some Sugar over them, & let set a moment.
Preheat oven to 375
Mix some Corn Starch in a little Cold Water, until smooth.
Add the Strawberries to the Rhubarb and put back on the stove. Stir in well.
Slowly add the Corn Starch mix, keep stirring until it starts to boil, continue
to stir for about 1 minute, then take off the heat.
Put this filling into a Deep Dish Pie Crust.
Cover with a second Pie Crust, & crimp down the edges tightly,
then put some holes in top Crust with a fork, or knife.
Set Pie on a cookie sheet and bake for about 35 minutes,
or until Crust is a golden brown.
Take out and let cool.
NOTE:
This is my own personal Recipe.

Chocolate Nut Puffs

1 1/2 c. Chocolate Chips
1/2 c. Chunky Peanut Butter
1/2 c. Chopped Nuts
2 Tbsp. Butter
About 36 Large Marshmallows, ~ cut up small... OR ~ (miniature Colored Marshmallows).




Combine Chocolate Chips,
Peanut Butter, and Butter in a heavy
sauce pan and slowly heat,
stirring occasionally until melted.
Note:
Use only enough Marshmallows
to cover bottom of pan.
Place Marshmallows in 8 X 8 inch cake pan,
Pour Chocolate mixture over Marshmallows.
Sprinkle with Nuts, ~ (chopped or whole).
Chill until firm, then cut into squares.

Potato Pizza

1 lb. Hamburger ~ (fried & drained)
1 can Cheddar Cheese Soup
1/2 c. Milk
4 c. Raw Potatoes ~ (sliced very thin)
Salt to taste
Spread the above in an oblong pan.
To a 5 oz. can of Tomato Sauce, ~ mix in the following.
1/2 c. Chopped Onion
1/2 tsp. Salt
1/2 tsp. Sugar
1/4 tsp. Black Pepper
1/2 tsp. Oregano
Carefully mix a very small amount of this mixture in with the Potatoes, evenly...
pour all the rest of this mixture over the Potatoes.
Cover with aluminum foil & bake in oven until Potatoes are soft, and done.
About 1 1/2 hours at 350

Bread & Chicken Casseroles

6 slices of Bread ~ (can be white or dark)
1 c. celery ~ chopped
2 Tbsp. Chopped Onion
1 c. Mayonnaise ~ diluted with Milk
Cut up Chicken ~ (Turkey, or Tuna).
Lay slices of Bread in bottom
of a 9 X 13 inch pan.
Mix the Celery, Onion, Mayonnaise, & Meat together.
Put this mixture over the slices of Bread in pan.
Then cover with more Bread.
Beat 4 Eggs with 2 c. Milk, & pour over top.
Leave in refrigerator over night.
Just before baking, put 1 can of
Cream of Mushroom Soup.... OR
Cream of Chicken soup over the top.
Bake at 350 for 45 to 60 minutes.

IOWA Brownies

Brownies

1/2 c. Oleo
1 c. Sugar
16 oz. Chocolate Syrup
4 Eggs
1 c. Flour
1 c. Chopped Nuts ~ (optional)



Cream Oleo & Sugar until fluffy.
Add Eggs, ~ 1 at a time.
Add Chocolate Syrup.
Beat until smooth.
Add Flour, and Nuts.
Mix well.
Pour into greased 10 X 15 inch cookie sheet.
Bake at 350 for 25 minutes.

BROWNIE FROSTING

1c. Sugar
1/4 c. Butter
1/4 c. Milk
Boil this together, for 1 minute.
Add 1/2 c. Chocolate Chips.
Beat until smooth.
Spread on top of Brownies.

Bar-B-Q sauce #2

2 1/2 c. Brown Sugar ~ (Packed)
64 oz. Ketchup
2 tsp. Onion Powder
3 tsp. Garlic Powder
3 tsp. Barbecue Spice
1/4 tsp. Chili Powder
1 tsp. Real Bacon Bits
1 Tbsp. Molasses
1 c. Onions ~ (finely chopped)
1/2 c. Green Pepper ~ (finely chopped)
Blend Brown Sugar and Ketchup together in
a large kettle, over medium heat.
Add Spices, Bacon Bits, and Molasses.
Stir in Chopped Onion, & Chopped Green Pepper.
Keep stirring as it heats up to a boil.
Put in 1/2 Pint jars and seal.
Makes eleven 1/2 Pints.

Bar-B-Q sauce #1

Makes about 9 1/2 pints. >>> (nineteen 1/2 pint jars).
2 1/2 c. Brown Sugar ~ (packed)
64 oz. Ketchup
2 tsp. Onion Powder
3 tsp. Garlic Powder
3 tsp. Barbecue Spice
1/4 tsp. Chili Powder
i tsp. Real Bacon Bits
1 Tbsp. Molasses
Blend Brown Sugar & Ketchup together in a large kettle
over medium heat.
Add Onion Powder, Garlic Powder, Barbecue Spice,
and Chili Powder.
As you stir, also add the Bacon Bits and Molasses.
Keep stirring, as it heats up to a boil.
Turn down the heat, & let simmer for a short time.
Fill 1/2 pint jars and let seal.

STONE SOUP

A man came wandering into a small town one day, who was very hungry since he hadn't eaten for many days. He decided to ask the people of that town for a small amount of food, just to keep his strength up. He knocked on the door of a house and asked for a bite to eat, but that person just said, "No, I don't have any food for you!"

He went to another house, but this person only shook his head, and closed the door. Then this very hungry man went to another house, but that person just said, "Go find your food some place else!

It seemed like there was no one in this small town willing to help, but he was so hungry that he could not go on his way without food.

Then, as he was walking through a small camping area, he found an empty kettle. He washed out the kettle, and put some water in it. He had nothing more to put in the kettle, so he decided to wash off this stone that was near by and use that to make a broth. As it started to cook, a curious person stopped by and asked, "What are you making here?" The hungry man replied, "Stone soup." The curious person asked, "I Never heard of that kind, is it any good?" The very hungry man said, "Yes, it's all I have." The curious person then asked, "Could I taste it?" But the answer he got was, "Not unless you add to it." Being that his curiosity was so great, he ran home ,and came back with some potatoes and put them in the kettle.

As it was cooking, another person came by to see what was being made. The hungry man just replied,"Stone soup." This person also asked if he could taste it. The only answer he got was, "Not unless you put something into it." So this person also went home, and came back with some left-over meat from the day before, and put in the kettle.

Then another person stopped by, "That smells kind of good, could I taste it?" The reply was the same, so he went home and came back with some tomatoes, and put them in the kettle.

Then a lady came by and said, "Whatever you're cooking, it smells pretty good, could I try it? Like the others, she was told, "Not unless you contribute to it." So she went home, and came back with some spices to add to it.

Another lady stopped by and said, "Mm mm, that dose smell good, could I have a taste?" "Not unless you put something into it," was the reply. She quickly went home, and came back with some onions and put them in the kettle.

They all sat around the cooking soup kettle, and started to get quite friendly. When the soup was done, all who contributed to the soup, including the very hungry man that drifted into town, had plenty to eat, and agreed it was very good too.

Fried Green Tomatoes

3 medium sized Green Tomatoes.... sliced 1/4 inch thick.
Salt lightly, and let set on a paper towel for 30 to 6o minutes.




Meanwhile, combine the following.....
1/4 c. Cornmeal
1/2 c. grated Parmesan Cheese
2 Tbsp. Flour
3/4 tsp. Garlic Powder
1/2 tsp. Dried Oregano
1/8 tsp. Black Pepper
Dip each Tomato slice into
1 Beaten Egg,
then into the cornmeal mixture.
In a medium skillet, heat Cooking Oil (or Butter)
over medium- high heat.
Fry Tomatoes, a few at a time, for 2 minutes per side,
or until a golden brown.
Drain on a paper towel - lined wire rack.
Serve HOT
