Syrup (for Pancakes & Waffles)

Old Family
Recipe
~~~~~~
.
Mix
1 part Dark Brown Sugar
to
1 part Boiling Water.
Stir to dissolve the Brown Sugar,
let it simmer until it starts to thicken,
stirring it now and then
to check the thickness.
Take off the stove and let cool some before use.
Store any left-over Syrup in the refrigerator,
or a cool place.

Whole Wheat Waffles

From a
1945
cook book

1 c. White Flour
3/4 c. Whole Wheat Flour
1 1/2 Tbsp. Sugar
3 tsp. Baking Powder
3/4 tsp. Salt
2 Large Eggs, {beaten seporately
1 c. light Cream
1/2 c. Milk
4 Tbsp. Melted Shortening
.
Put all Dry Ingreedients in a sifter
to be sifted together into a mixing bowl.
Beat Egg Yolks, {only,
then adding gradually
the Cream,
and Milk
to blend smoothly.
Mix carefully
the Dry Ingredients
with
liquid Mixture.
Last, fold very stiffly beaten Egg Whites
into Batter.

Waffles

4 c. Flour
1 pt. Sour Milk, - or Cream
1 tsp. Baking Soda
4 Eggs, { beaten separately
1 piece Butter the size of an egg
a little Salt
.
Beat all well together.

Cheese Waffles

From a
1945
cook book

2 c. Sifted Flour
1/2 tsp. Salt
5 Tbsp. Melted Butter
2 tsp. Baking Powder
3 Egg Yolks, {well beaten
1 1/4 c. Milk
1 c. grated American Cheese
3 Egg Whites, {stiffly beaten
.
Sift Flour, measure,
then add Baking Powder,
and Salt,
and sift again.
Combine Egg Yolks and Milk;
add Flour,
beaten until smooth,
add Butter,
and Cheese.
Fold in Egg Whites.
Bake in hot Waffle iron.
.
Makes five 4-section Waffles.

Rice Waffles

From an
1888
cook book

1 pt. of cold-boiled Rice,
thin it with cold Milk,
beaten well,
1 Egg,
a small piece of Butter,
and Flour to make a Batter
stiff enough to Bake.
.
Use Pork to grease your Waffle-iron.

Chocolate Waffles

From a
1928
cook book

1/2 c. Butter
3/4 c. Sugar
2 Eggs
1 tsp. Vanilla
1 1/4 c. Flour
1 tsp. Baking Powder
6 Tbsp. Cocoa
1/2 tsp. Cinnamon
1/2 tsp. Salt
.
Cream the Butter and add Sugar slowly.
Add beaten Eggs,
Flavoring,
and all the dry ingredients,
sifted together.
Mix well.
Heat waffle iron about 5 minutes.
(It must not be as hot as for regular Waffles.)
Grease iron very slightly.
If electric iron is used, no greasing is necessary.
Put 3 or 4 Tbsp. of Batter into center of the iron.
Spread Batter slightly.
Bake about 2 or 3 minutes.
Serve warm with Ice Cream,
or slightly sweetened Whipped Cream.

German Waffles

Over 106 years old

1/2 lb. Butter
5 Egg Yolks
1/2 lb. Flour, {= 1- 2/3 c.)
1/2 pt. Milk, {=1 c.)
5 Egg Whites

.
Stir Butter to a Cream,
add Egg Yolks mixed with Flour.

Adding Milk gradually stirred in,
and lastly;
the Egg Whites, whipped to a stiff froth and
beaten into the Butter.

Very rich and delicious.

Waffles (home Made)

1 1/2 c. Sifted Flour
1 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 Tbsp. Sugar
2 large Eggs, -{separated
1 c. Milk
2 Tbsp. melted Fat
.
Sift dry ingredients together.
Beat the Egg Yolks and Whites separately.
.
Combine Egg Yolks, Milk, & Fat.
Then mix with dry ingredients, stirring
only until the Batter is smooth.
.
Fold in beaten Egg Whites.
.
Bake in a hot Waffle iron.

(makes 4 Waffles)
