Peanut Brittle (home made)

New Years

2 c. Sugar
1 c. Light Corn Syrup
1/2 c. Water
2 c. Raw Peanuts
1 tsp. Butter
1 tsp. Vanilla
1 tsp. Baking Soda

Grease a cookie sheet, ~ (with sides),
sprinkle with salt... set aside.
Combine the Sugar, Corn Syrup & Water
in large sauce pan.
Cook to 238 degrees.
Stir in peanuts.
Cook to 310 degrees.
Remove from heat.
Add Butter, Vanilla, & Baking Soda.
Stir to mix together well.
Pour immediately onto greased cookie sheet.
Let Cool.
Turn it over and let it cool more.
Break into pieces.

Suger Cookies

From;
my friends

1/2 c. (1/4 lb.) Butter
1 c. Flour
2 Tbsp. Cornstarch
1/4 c. Granulated Sugar
1 tsp. Vanilla
2 tsp. Water
.

Preheat oven to 350 ...
Grease 2 cookie sheets.
.
Place the Butter, Flour, and cornstarch in
a medium mixing bowl.
Combine using a pastry blender,
or 2 knives until the mixture resembles
fine crumbs.
Then stir in the Sugar, Vanilla, & Water.
Mix until a stiff dough forms.
.
Wrap in plastic wrap and chill for 10 minutes.
.
Roll out the Dough on a Floured surface
to about a 1/4 inch thickness.
.
Cut out shapes, from the dough,
with Cookie cutters.
Place on greased Cookie sheets.
.
Bake until the edges are firm...
(about 15 to 18 minutes)
.
Let cool slightly on the cookie sheets,
then remove to cool completely.

Rice & Raisin Pudding

2 c. Milk
1 c. White Rice, -{cooked
1 Tbsp. Table Fat
1/3 c. Sugar
1/4 tsp. Salt
1/2 c. Raisins
2 Eggs, -{beaten

Heat Milk;
add Rice, and Fat.
.
Add Sugar, Salt, & Raisins
to the beaten Eggs...
slowly stir in the hot Milk mixture.

Pour into a greased baking dish,
set dish in a pan of hot water.
Then set in oven.

Bake at 350 for 1 hour,
or until set.

Hot German Potato Salid

1 1/2 lbs. Hash Brown Potatoes, ~ (approximately)
8 thick slices Bacon
6 Tbsp. Flour
1 c. Sugar
1 c. Vinegar
1 c. Water
1 tsp. Salt
1/4 tsp. Black Pepper
1/2 tsp. Celery Seed
1/2 c. Onion, -{finely chopped

In a large bowl,
thaw and crumble Hash Brown Potatoes.
.
Fry Bacon in large skillet over medium heat.
Remove Bacon from skillet;
reserve drippings in same skillet.
.
Using a wire whisk, stir Flour into
Bacon drippings until smooth.
Add;
Sugar, Vinegar, Water, Salt, Pepper,
and Celery Seed.
.
Stir mixture until well blended.
.
Continue heating over medium heat
until mixture boils and thickens.
.
Add Onions and crumbled Bacon
to mixture.
.
Pour mixture over Hash Brown Potatoes.
Stir to blend in all ingredients.

Bean with Bacon Soup

1 3/4 c. White, Dry Beans
2 Qt. Water
1 medium Onion
1 tsp. Salt
3 Tbsp. Molasses
1 tsp. Garlic Powder
1/2 tsp. Black Pepper
2 Tbsp. Ketchup
3/4 tsp. Taco Sauce, ~ (optional)
1/2 tsp. Chili Powder, ~ (optional)
4 strips Bacon, ~ 12 inches long
.
Wash Beans in cool Water, and drain.
.
Put Beans in a Soup Kettle, along with 2 Qt. Water...
bring it to a boil, let boil for about 2 minutes,
then remove from heat,
keep it covered, & let sit.
.
Chop up Onion and add to the beans,
along with all other ingredients.....
except the Bacon.
.
Cut Bacon into 1 inch pieces,
and just slightly fry.
Add to the Soup.
.
Let simmer for 2 to 2 1/2 hours,
stirring occasionally.

Scrambled Eggs with Cottage Cheese

1 Tbsp. Fat
1/2 tsp. Salt
some Black Pepper
1/4 c. Milk
6 large Eggs, -{slightly beaten
3/4 c. Cottage Cheese
4 slices Toast

Heat Fat in fry pan.
.
Stir seasonings and Milk into Eggs.
Pour into fry pan and cook slowly,
stirring occasionally.
.
When Eggs are thickened, mix in the
Cottage Cheese.
.
Serve at once on
(or with) Toast.

And...
with Hash-Browned Potatoes
on the side.

French Fried Potatoes (home made)

Bag of Large, Red Potatoes, ~ (any amount)
Water
Canning Salt
Onion


Peel Potatoes and put in large bowl.

Cut Potatoes with a French Fry Cutter,
(the long way).

Pack cut, raw French fries on end in jars.

Place a small Onion in with the French Fries.

Add 1/4 Tsp. Canning Salt to each jar,

pour hot water in jars to cover french fries,

but leave 1 1/4 inch air space in each jar.

( Best to use Quart jars)

Place in pressure cooker-canner

with about 2 inches of water in it.

Process at 10 lbs. pressure for 30 minutes.

Butter Milk Pan Cakes (home made)

1 1/2 c. Sifted Flour
2 tsp. Baking Powder
1/2 tsp. Salt
1 Tbsp. Sugar
2 Eggs, -{beaten
1 1/4 c. Butter Milk
2 Tbsp. Melted Butter

Sift dry ingredients together.
Beat the Eggs and combine with,
Butter Milk, & melted Butter.
.Gradually add to the dry ingredients;
stir only until Batter is smooth.

.
Bake on hot, greased griddle.

. (makes about 8 to 10 large Cakes)

Waffles (home Made)

1 1/2 c. Sifted Flour
1 1/2 tsp. Baking Powder
1/2 tsp. Salt
1 Tbsp. Sugar
2 large Eggs, -{separated
1 c. Milk
2 Tbsp. melted Fat

Sift dry ingredients together.
Beat the Egg Yolks and Whites separately.

Combine Egg Yolks, Milk, & Fat.
Then mix with dry ingredients, stirring
only until the Batter is smooth.

Fold in beaten Egg Whites.

Bake in a hot Waffle iron.

Original Ham Bone Soup

1 Ham Bone, ~ with some Meat still on it
1 1/2 pts. left over Ham Juice
1 pt. Water
1 c. Onions, -{chopped
1 c. Raw Carrots
1 section Garlic clove, -{sliced thin
1/2 c. White Rice
4 oz. can Mushrooms, -{drained
1 Tbsp. Imitation Bacon Bits, <~> or Real Bacon Bits
1 pt. Home Canned Tomatoes, - (or 1 Qt. if desired)

Place Ham Bone in slow cooker;
add left over Ham Juice,
Water, Onions, & Carrots.

.
Slice Garlic as thin as possible,
with a Razor Blade.
Add to the slow cooker.

.
Measure out Rice and Boil.
Drain Rice and add to cooker.

Also add drained Mushrooms, Bacon Bits,
& canned Tomatoes.

Cook for about 30 minutes on high,
then turn heat down to low,
let simmer for another 45 minutes,

...stirring occasionally.

1 Tbsp. Vinegar
1 Tbsp. Worcestershire Sauce
1 Tbsp. Heinz 57 Steak Sauce
1/2 tsp. Garlic Powder
1/4 tsp. Salt
1/4 tsp. Ground Mustard
1/4 tsp. Paprika

About 8 to 10 Hamburger Buns

Cook over medium heat;
Beef, Onion, & Green Pepper,
until the Meat is done, and Vegetables are tender.
Drain, but save some juice.

Strawberry Syrup

Great on Pancakes, or Waffles

Ready in 15 minutes or less.

1 pt. Fresh Strawberries, -{cut in 1/2
3/4 c. Sugar
2 Tbsp. Corn Syrup
1 1/2 tsp. Lemon Juice
1/2 tsp. Butter, ~ (or Margarine)
.
Place halved Strawberries in a blender,
cover, and process until smooth.
.
Transfer to a sauce pan;
add Sugar,
Corn Syrup,
Lemon Juice,
& Butter.
Bring to a boil;
let boil for 1 minute...
stirring constantly.
Skim off all foam.
.
Strain out seeds, if desired.
Serve warm over
Pancakes, or Waffles.

Refrigerate any left - overs.

Reheat before serving.

Slow Cooked Salsa

Yields about 2 cups.

10 Plump Tomatoes, -{cored
2 Garlic Cloves
1 Small Onion, -{ cut into wedges
2 Jalapeno Peppers *
1/4 c. Cilantro, ~ (or Parsley Leaves

Cut a small slot in 2 Tomatoes;
insert a Garlic Clove into each one.

Place Tomatoes, & Onion in a slow cooker.
.
Cut stems off jalapenos,
(remove seeds if a milder Salsa is desired)
Place Jalapenos in slow cooker.

Cover, and cook on high for
2 1/2 to 3 hours,
(or until Vegetables are softened).
Don't be alarmed if some brown slightly.
Cool.

In a blender, combine the Tomato mixture,
Cilantro {or Parsley leaves), & Salt.
Cover and process until smooth.

Refrigerate all left overs.
.
* When cutting or seeding Hot Peppers, always use rubber gloves, or
plastic gloves to protect your hands. Avoid touching your face.

Pickled Fish

The Town of Tenstrike, Mn.

Cut Fish into small pieces.
For each Quart of Fish,
use...
5/8 c. Iodized Salt, disolved in small amount of
White Viegar.

Place Fish pieces in extra large jar, with lid, -{or 5 Qt. ice cream pail,
with cover, may be used.
.
Pour Salt mixture over Fish, & compleatly cover with White Vinegar.
..
Keep in refrigerator for 5 days. Shake several times each day.
.
After 5 days,..... Rince Fish, & soak in plain Water for about
1/2 hour.
.
Bring to a boil... then let cool.

Brine:

1 part Sugar
2 parts White Vinegar
2 Tbsp. Mixed Pickling Spices, ~ (or amount to fit taste)

Place lids on jars.
(no need to seal them)
Keep in cool place.

Choco - mint Snappers

6 oz. (1 cup) Mint flavored Chocolate chips
2/3 c. Shortening
1/2 c. Sugar
1 large Egg
1/4 c. Corn Syrup
1 3/4 c. Flour, -{sifted
2 tsp. Baking Soda
1 tsp. Cinnamon
1/4 tsp. Salt

Melt Chocolate Chips in double boiler, over hot...
but not boiling, Water.
Remove from heat.
.
Combine Shortening, Sugar, & Egg in a bowl...
beat until creamy.
Blend in melted Chocolate, & Corn Syrup.
.
Sift together the sifted Flour, Baking Soda,
Cinnamon, & Salt.
Stir gradually into mixture.
.
Shape 1 Tbsp. of dough into ball, & roll in Sugar.
Set on ungreased cookie sheet, about 2 1/2 inches apart.
.
Bake at 350
.
..... Let stand a few minutes before removing from pan.
Makes 3 dozen, 3 inch cookies.

Lemon Glaze Cake

1 White Cake mix
1 Small pkg. Instant Lemon Pudding
(follow directions on box)
...........But use this amount:
2/3 c. Oil
3/4 c. Water
4 Eggs

Beat for 2 1/2 minutes at medium speed.
Pour into a 9 X 13 inch pan, or 2 round pans,
that has been greased & Floured.

Canned Potatoes

Needed:

- - - - Canning Jars, Lids, & rings, -{Quarts are best
- - - - Pressure Cooker, Canner
- - - - A sack of Potatoes, -{any size
- - - - Water, -{soft water is best
- - - - Canning Salt

- - - - Onion, -{optional

- -

Do NOT...
~~~~~~~~
peal the Potatoes.

Scrub potatoes (large or small).
If small, (the size of a 1/2 dollar);
just cut in 1/2

If large, cut them up in chunks,
about 1/2 the size as if you were to boil them.

Put all the cut up Potatoes in a large bowl.

.
Make sure to sterilise the canning jars by
setting jars upside down in 3/4 inch of
hot, simmering water.

Lids must also be sterilized in the same manner.

.
Pack cut up Potatoes into hot jars,
about 1/2 full, place a dime sized Onion in the middle of
each jar, continue to pack Potatoes about 1 1/4 inch from jar top.

Add 1/4 tsp. Canning Salt
to each jar of Potatoes...

then pour Hot Water into each jar...

make sure Water covers all Potatoes.

.
Lightly rub your finger once around
the jar rim to be sure it's smooth,
and free from even a grain of Salt.
.
Quickly, but carefully, set a sterile lid on the jar,
screw on lid Ring with just the very tips of your
fingers, snug yet not real tight.

Set jar in pressure cooker, canner.

Repeat this until canner is full of jars.


Make sure the Water in canner is about
2 inches deep...


after all jars are placed in canner.


.
Make sure canner cover is on tight.
Bring Pressure up to 10 lbs. of pressure,
Watch it closely, to keep it at 10 lbs. for
about 40 minutes, (Quarts). and...
about 30 minutes, (pints).
Then shut off heat and carefully release the pressure.
Make sure there is NO pressure left in canner.
Let set a minute or two. Slowly loosen the cover. When lifting
the cover of the canner,
lift the edge of the cover on other side of canner first.

Remove jars and set on wire rack, or thick towel to cool, and seal.


.Repeat process by filling more jars and setting them in canner.

After jars have sealed, wipe off the jars with a damp cloth.

Store in a cool room, on a shelf.

only enough Flour to mix soft
a little Salt

Dissolve Sugar in the Sweet Milk;
add Eggs, Melted Butter,
Baking Powder, Flour, and a little Salt,
... and flavor with Nutmeg, & Lemon.

Mix soft as possible.

Deep Fry;
keep turning them over so that they

and brown nicely on both sides.

I tried it, it works.
.
If you have ever craved Banana Bread, (or others)
and didn't have the time to make it...
Than this hint is for you.
.
Mix up the Batter as you normally would. Then follow these instructions.
.
1. Wash and Sterilize an ample amount of Large Mouth Pint Canning Jars.
................They must be Large Mouth Pints.
2. Grease the inside of sterile jars with Margarine.
3. Pour Batter into jars, leaving about 1 1/2 inch space from top.
4. Set filled jars on a cookie sheet and bake. Test, to see if all are done.
5. Have sterile Canning lids & Rings ready to use.
6. When done, shut off oven and take only 1 jar out of oven at a time.
7. Check to make sure the glass rim of the jar is still clean, with tip of finger. *
8. Instantly, set lid on jar and screw on the ring.... snug, but not tight, set aside.
9. Repeat for each jar, one at a time. Do not let them cool until after lids are on.
10. These jars should seal. You have just Canned the Banana Bread for a later date.
11. When opened, the Bread will fall right out... Fresh.
.
* If Banana Bread rises above the top of jar rim, lay jar on side and slice off a taste.
----- -Bread must be below rim to seal.

Blueberry Banana Bread

(makes 2 Loaves)

1 c. Sugar
1/2 c. Crisco
2 large Eggs, -{beaten
4 large, extra ripe Bananas, -{mashed
1 tsp. Vanilla
1/4 c. Cream, ~ (or 1/2 & 1/2 Cream)
2 c. Flour
2 Tbsp. Baking Powder
2 Tbsp. Powdered Sugar
1 tsp. Baking Soda
1/4 tsp. Salt
1 1/2 c. Blueberries, ~ (unsweetened)
.
Cream the Sugar & Crisco.
.
Add the well beaten Eggs.
Mash the Bananas well, and add.
Then blend in mashed Bananas & Cream.
Sift in Flour, Baking Powder,
Powdered Sugar, Baking Soda, & Salt.
.
Mix together very thoroughly.
.
Carefully mix in the Blueberries, - by hand.
.
Pour Batter into two well greased medium Bread pans.
.
Bake for about 65 to 70 minutes, at 350
(or until tested to be done)

Let cool in pans for at least 5 or 10 minutes.

Cheesy Potato Soup

6 to 7 c. Potatoes, {peeled and cubed
1 1/2 c. Onions, {chopped
3 c. Celery, {chopped --(optional)
1 1/2 tsp. Salt
4 c. Water
3 c. Half & Half
1/2 stick Real Butter
1 c. Shredded Cheddar Cheese
Some left over Ham, {cubed -- (optional)

Combine:
Potatoes,
Onions,
Salt, &
Celery
with Water...
in a large Soup kettle.
.
Simmer about 20 minutes
on medium heat...
(until tender).

Put in a Blender and blend only for a short time...
( just blend until mixed, but still chunky ).

Return it to the Kettle...
add the Half & Half,
Butter, &
Cheese.

Ham, ... {may be added at this time.

Simmer until Hot. Do not Boil.

1 large Egg
1 tsp. Vanilla
1 c. Oatmeal
1 1/3 c. Flour

1 Tbsp. Olive Oil
1 tsp. Sugar
1/2 c. cold Water
1 c. Flour...or enough to make a thin Batter

Powdered Sugar

Remove the Peel from Oranges, and
quarter them, or
separate into sections.

Make the Batter by combining;
Eggs, Olive Oil, Sugar,
cold Water, & Flour.

Cover the Oranges with
Powdered Sugar;
then dip in the Batter....
Fry in Deep Fat.

1903 Boston Baked Beans

Made
in Bean Pot

1 Qt. Navy Beans
1/2 tsp. Baking Soda
1/2 lb. Salt Pork
1 Tbsp. Dry Mustard
1 tsp. Salt
1/4 tsp. Pepper
1/4 c. Molasses
-
Soak Navy Beans over night;
in the morning, turn hot water over them,
and cook till the skins wrinkle.
Add Soda, and when they foam,
turn into a colander and drain.
Put in the Bean pot, Salt Pork ...scoring the rind well.
Then put in the beans.
-
Mix remaining ingredients in a cup;
completely fill the cup with Boiling Water,
stirring well to free the Mustard from lumps.
-
Turn this over the Beans and add enough Water, boiling,
to cover them.
-
Bake 7 or 8 hours
in a slow oven.
-
Add boiling Water as it cooks away.
When they have cooked 6 or 7 hours,
remove the cover from the Bean Pot ,
and finish the cooking, uncovered.
-
The Water should never boil hard,
only simmer,
there should be enough in just to cover them.
When done, the Water should be boiled away.

Candy Cane Cookies

A Merry Christmas

6 c. Flour
2 tsp. Cream of Tartar
2 tsp. Baking Soda
1 tsp. Salt
2 c. Butter
6 large Eggs
2 1/2 c. Sugar
1 tsp. Vanilla
2 or 3 tsp. Peppermint Extract
?? Red Food Coloring
-
Sift together the...
Flour, Cream of tartar,
Baking Soda, & Salt.
-
Cut in the Butter.
-
Lightly beat the Eggs, and add
the Sugar & Vanilla.
Add to Butter & dry mixture.
-
Then add the Peppermint extract.
Mix thoroughly.

Separate the dough equally in 1/2.....
Put only 1/2 of the dough in a bowl, &
blend in enough Red Food Coloring
so it looks fairly bright.

Keep the two bowls of dough separate...
Refrigerate both doughs.

Take pieces of uncolored dough, little at a time,
and roll it so it looks somewhat like a pencil.
Lay these aside.
Then .....
do the same with the Red dough.
-
Twist a plane dough piece, & a Red dough piece
together so it looks like a long barber pole.
Curve one end to make it look like a cane.

Place on a cookie sheet.
Sprinkle some Sugar over the top of each cane.
-
Bake at about 350
(watch cookies close so as not to burn)

Banana Nut Bread

Cream together the Sugar, Butter, & Shortening.
Add beaten Eggs.
Then add well mashed Ripe Bananas.

and mix together thoroughly.

Bake for 1 hour at 350 in other Pans.

1 c. Ketchup
1/2 c. Heinz 57 Steak Sauce

Put all of the above ingredients into an x-large
mixing bowl in the order listed.
mix together thoroughly,
with clean hands.
