Currant Meringue Pie

From a
1902
cook book
,,,,,,,,,,,,,,
.
Line 2 pie-pans with a rich short Crust,
prick with a fork,
and bake to a very light brown.
When cool,
fill with the following
and bake in a very slow oven:
Beat the Whites of 3 large Eggs until stiff,
add gradually 1 c. Sugar,
and 1 pt. of Currants.

Fried Mouse Pie

Things are Tough
all over the
Country!!

.
5 Fat Field Mice
1 c. Macaroni
1/2 medium thinly sliced Onion
1 medium can Tomatoes
1 c. Cracker Crumbs
.
Boil Macaroni for 10 minutes.
While waiting,
fry the Field Mice in a skillet,
to fry out the excess Fat.
Grease a casserole dish,
put in a layer of Macaroni,
Add Onion,
Tomato,
Salt and Pepper.
Add the Field Mice,
then cover with remaining Macaroni.
Sprinkle top with Cracker Crumbs.
Again season with
Salt and pepper.
Bake at 325 F. for 20 minutes,
or until Mice are well-done.

NOTE:

.......In cold or rainy weather, when Field Mice are hard to find,
you may substitute for Sausages.

Cream Puffs

From a
1915
cook book

.
1 c. Hot Water
1/2 c. Butter
.
Boil these together,
and while boiling
stir in
1 c. Sifted Flour dry.
Take from the stove
and stir to a thin Paste,
and after this cools
stir in 3 Eggs (unbeaten).
Stir it for 5 minutes.
Drop in Tablespoons on a Buttered tin
and bake in a quick oven for 25 minutes,
opening the oven door no more often
than is absolutely necessary,
and being careful that they do not
touch each other in the pan.
This amount will make 12 Puffs.

Cream for the above:

1 c. Milk
1 c. Sugar
1 Egg
3 Tbsp. Flour
some Vanilla, to flavor
.
Stir the Flour in a little Milk.
Boil the rest;
turn this in and stir until the whole thickens.
When both this and the Puffs are cool,
open the Puffs a little way with a sharp knife,
and fill them with the Cream.
() These never fail to Puff ()
.
This Cream may also be filled into other Tart shells
and found to be very nice.

Sweet Potato Pie #3

From a
1915
cook book

.
1 c. Sweet Potatoes, {mashed
1 Qt. Sweet Milk
2 Tbsp. Melted Butter
3 Eggs, {beaten
2/3 c. Sugar
some Nutmeg
some Cinnamon
.
Boil the Sweet Potatoes very soft.
Peel, mash, adding the Milk,
and put through a colander.
Have a pie-dish lined with Paste.
Beat together the Butter and Sugar.
Add the Sweet Potatoes,
a little at a time,
then the Eggs,
and Flavoring.
Fill the Paste lined tins
and bake.

This will make 2 large pies,
or 3 small pies

Sugar pies ..... Southern Style

3 c. Light Brown Sugar
1/2 c. Melted Butter
1/2 c. Cream
3 Eggs
.
Mix ingredients well.
Season with Lemon
and bake in Pastry
without a top Crust.
Use low flame.

Ripe Tomato Pie

cook book

Line a pie-plate with nice Crust.
Peel and slice sufficient Tomatoes,
(half ripe ones are really better),
to fill the Pie Crust.
Sprinkle over the top 1/2 c. Sugar,
1 tsp. Flour,
Butter, (the size of a Walnut),
cut this in bits,
and flavor with Lemon.
Cover with an upper Crust.

Blueberry Pie ( home made, from scratch )

From a
1920's
cook book

Line a deep plate with Paste
and fill it with Blueberries,
slightly dredged with Flour;
sprinkle with 1/2 c. Sugar,
and 1/8 tsp. Salt;
cover,
bake 40 to 45 minutes over low flame.

Apple Pie without Apples

From a
1902
cook book

.
Put 10 large, square Soda Crackers in a bowl;
pour over them 1 Qt. of Boiling Water;
let them soak for 1 hour;
then mash them up very fine;
add to them the grated Peel and Juice of 4 Lemons,
and 5 teacups {=2 1/2 cups} of Brown Sugar;
mix well;
put it in Pastry and bake like any other Pie.

Squash Pie

From an
1897
cook book

.
To 1 c. of boiled, sifted Squash
(which should be as dry as possible)
add 1 Egg,
2 c. Milk,
a pinch of Salt,
a seasoning of Nutmeg,
and sweeten to taste.
Line a deep dish with with plain Paste,
fill with the Squash Mixture,
bake 1 hour in a moderate oven.

Mock - Cherry Pie

From a
1902
cook book

Measure 2 cups of Cranberries,
then cut in half and soak 1/2 hour in cold Water
to remove the seeds.
Mix 1 Tbsp. of Corn-starch with a little cold Watter,
then stir it into 1 cup of boiling Water;
when thick;
remove from the fire
and add 1 Tbsp. of Butter,
a pinch of Salt,
the Cranberries,
and 1 cup of Raisins;
1 cup of Sugar,
2 tsp. of Vanilla;
pour into a Pastry-lined tin,
place a Crust over the top,
and
Bake until done.

Choice Mince Meat Pie

From an
1897
cook book

The following is a very choice recipe for
"Pie Meat,"
which should be prepared a month or more before using:

.
Chop fine
2 lbs. raw lean Beef
and 2 lbs. Suet.
Mix with them thoroughly
4 ounces of Salt,
1 1/2 ounces of a mixture of
Cinnamon, Cloves, and Allspice,
1/2 ounce of White Pepper,
and 2 Nutmegs.
Chop and add 4 lbs. decidedly sour Apples,
2 lbs. of Currants,
2 lbs. of chopped raisins,
2 lbs. of Citron,
and sufficient Lemon Juice to flavor,
1 Qt. of Brandy,
and 1 Qt. of Cider.
Sweeten with
1 Qt. of good Molasses,
and 2 lbs. of Brown Sugar.
In the mixed Spices, let the Cinnamon predominate.

Sweet Potato Pie #2

1909
cook book

.
2 c. boiled Sweet Potatoes
2 Tbsp. Butter
2 Tbsp. Lemon Juice
1 c. Sugar
grated Rind of 1/2 Lemon
1 Tbsp. Ginger
1 Tbsp. Cinnamon
1 tsp. Salt
1/2 grated Nutmeg
2 c. Milk
3 Egg Yolks
3 Egg Whites
.
Rub Sweet Potatoes through a sieve,
add the Butter, Lemon Juice, Sugar
in which have been mixed the
grated Lemon Rind, Ginger, Cinnamon,
and grated Nutmeg.
Stir well together,
add Milk, and the beaten Yolks of Eggs,
and last, the Whites of Eggs beaten stiff.
Fit the Paste to the pan,
dust with Flour,
fill, and bake.

Oyster Pie

From a
very old
cook book
(age unknown)
-------------------------
.

Line a deep dish with nice Pastry,
dredge the Crust with Flour,
pour in 1 pint of Oysters.
Season well with Butter, Salt, & Pepper,
sprinkling Flour over all.
Pour on a little of the Oyster Liquor.
Cover with a Crust.
Two hard-boiled Eggs chopped coarsely and
mixed with the Oysters,
will be found a desirable addition.
The Eggs and the Flour may be omitted,
and a cup of Cracker Crumbs used instead.
1/2 teaspoon of Mace is liked by some.

Mince Meat Pie Filling

cook book

3 lbs. Lean Beef, {finely chopped
2 lbs. Suet, {finely chopped
3 Qts. Apples, {finely chopped

3 lbs. Raisins, {chopped
2 lbs. Currants
3 lbs. Citron, {cut in small pieces
1/2 c. Candied Orange Peel, {chopped
1/2 c. Candied Lemon Peel,{chopped
1/2 c. Lemon Juice
1/4 c. Orange Juice
2 Tbsp. Salt
4 c. Sugar
1 c. Coffee
2 c. Cider
1 tsp. Cloves
1 tsp. Allspice
2 tsp. Cinnamon
3 c. Brandy
1 c. Sherry
1 c. Currant Jelly
.
Mix all ingredients except
for the Brandy, and Sherry.
Cook 2 hours.
Add Liquor;
let stand in crock for a week
before using.

Mince Meat Pie

1897
cook book

4 Qts. of chopped Meat
5 Qts. chopped Apples
2 lbs. Raisins, (chopped fine)
2 lbs. Raisins, (left whole)
2 lbs. Black Currants
1/2 lb. Citron
1/2 lb. Candied Orange Peel, (finely cut)
4 Qt. Sugar
2 c. Molasses
1 pt. boiling Cider
1/2 pt. Wine, or Brandy
1 Tbsp. Salt
1/4 c. Cinnamon
1/4 c. ground Cloves
1/4 c. Nutmeg
3 Lemons, (grated peel and juice)
.

Stir all together, and boil slowly one hour.
While hot, add 2 c. Butter.
If it seems too dry,
add more Boiled Cider.
.
Seven pounds of meat makes
this quantity.

Mince Meat No. 4

From a
1908
cook book

.
2 1/2 lbs. round of Beef
2 Qts. chopped Apples
1/2 pt. chopped Suet
1 1/2 pts. Raisins
1 pt. Currants
1/4 lb. Citron
1 Qt. Sugar
1/2 pt. Molasses
3 pts. Cider
2 Tbsp. Salt
4 Tbsp. Cinnamon
1 Tbsp. Allspice
1 Tbsp. Mace
1 tsp. Cloves
4 Nutmegs (grated)
4 Lemons
.
Put the Beef in a small stewpan
and cover with boiling Water.
Cook 3 hours,
having the Water only bubble at one side of the stewpan.
Take from the fire and let the Meat cool in the Water,
with the cover off the pan.
When cold, remove fat and gristle,
then chop the Meat rather fine.
Put it in a large bowl with all the other ingredients,
except for the Cider.
Mix thoroughly.
Now add the Cider,
and let the mixture stand in a cold place overnight.
In the morning,
turn the Mince Meat into a porcelain kettle and heat slowly
to the boiling point;
then simmer gently for 1 hour.
Put the mixture into stone jars and set away in a cold place;
or it may be put in glass jars and sealed.
.
It will keep for years in this way.
.
When the pies are being made,
1 tumbler Jelly or Marmalade to 3 or 4 Pies
will be found a great improvement.

Squash Pie

cook book

1 Qt. Steamed Hubbard Squash
5 Eggs, -{well beaten
2 Qt. Milk
1 Tbsp. Cinnamon
1 Tbsp. Ginger
1 c. Sugar, ~ (or sweeten to taste)
slightly Salt
.
Steam a Hubbard Squash;
when it is done, rub through a colander.
.
To every Quart of sifted Squash,
add all remaining ingredients.
Mix together well.
.
Bake as you would
a Pumpkin Pie.

Caramel Pie

1925
cook book

.
1 c. Dark Brown Sugar
1 1/2 c. boiling Water
2 rounded Tbsp. Flour
1 Egg
1/2 tsp. Vanilla
.
Thoroughly mix the Flour and Sugar.
Add to this the Water,
place in a double boiler over the fire
and stir until mixture thickens.
Drop in this the whole Egg,
beating vigorously until thoroughly mixed.
Cook a few minutes longer,
remove from fire and add Flavoring.
Pour into baked Crust.
Spread with the beaten Egg Whites
to which 2 Tbsp. of Sugar has been added.
Brown in oven.

Boston Cream Pie

2 Eggs, -{separated
1 c. Sugar
1 c. sifted Cake Flour
1 tsp. Baking Powder
1 dash Salt
1/2 c. hot Milk
1 Tbsp. Butter
.
Beat Egg Whites stiff.
Fold in beaten Egg Yolks,
and beat together.
Gradually beat in Sugar.
First, mix and sift the
Flour, Baking Powder, and Salt...
then fold into mixture.
Add hot Milk in which Butter has been melted.
..
Bake in layer pans about 25 minutes,
in moderate oven.

Cream Filling

.
3/4 c. Sugar
1/3 c. Flour
1/2 tsp. Salt
2 Eggs, -{well beaten
2 c. Scalded Milk
1 tsp. Vanilla
.
Combine Sugar, Flour, and Salt.
Add Eggs, then Milk.
Cook 15 minutes in double boiler.
Cool and flavor with Vanilla.
Top Cake with Chocolate Frosting.

Cranberry Pie

This is sometimes called
Mock Cherry Pie

.
Use Plain Paste.
.
1 1/4 c. Cranberries, -{chopped
1/2 c. Raisins, -{chopped
1 c. Sugar
1/4 c. Water
1 Tbsp. Butter
.
Mix all the Filling Ingredients
together thoroughly.
Put Filling in the Crust,
Bake as you normally would a Pie.
