Baking Powder Biscuits # 2

4 tsp. Baking Powder
2 Tbsp. Butter
3/4 c. Milk

Mix and sift dry ingredients.
Rub in fat with tips of fingers.

Rhubarb Pudding

1 c. Sugar
1 pinch Salt

Cook Rhubarb and 2 c. Water for about 10 minutes.
Mix Sugar, Corn Starch, and 1/2 c. Water,
then add to Rhubarb.
Cook about 7 to 8 minutes longer.

Serve cold with Cream.

Coffee Flavored Cake Filling

1 jar Cream, -{whipped
little Corn Starch

Bring Coffee and Sugar to a boil.

Boston Cream Pie

1 tsp. Baking Powder
1 dash Salt
1/2 c. hot Milk
1 Tbsp. Butter

Beat Egg Whites stiff.
Fold in beaten Egg Yolks,
and beat together.
Gradually beat in Sugar.
First, mix and sift the
Flour, Baking Powder, and Salt...
then fold into mixture.
Add hot Milk in which Butter has been melted.

Bake in layer pans about 25 minutes,
in moderate oven.

Butter Bakes

1 lb. Butter
2 c. Sugar
4 Eggs
6 c. Cake Flour
3 tsp. Baking Powder
2 tsp. Vanilla
1/6 tsp. Salt
.
Measure the Flour, Baking Powder, and Salt
in a sifter, and sift 3 times, then set aside.
Cream the Butter thoroughly, until foamy,
then add the Sugar.
Beat the Eggs thoroughly and add.
Then add the Vanilla.
Sift in 1/3 of the dry ingredients and mix well.
Repeat until all Flour mixture has been used.
If the Batter looks too thin,
it will not hurt to add from 1/2 c. to 1 c. Flour.
Turn Dough on a Floured board and
form into a large ball.
Cut ball into 4 pieces and make 4 thin rolls.
Rap each roll in wax paper and
put into refrigerator for 2 hours.
Roll out on board and cut into cookies.

Bake from 7 to 10 minutes in hot oven
(about 400 F.)

1 c. boiled Rice
1/2 can Tomato Soup
1 dash Red Pepper
little Salt
1 c. Cream
2 cans cleaned Shrimp
2 c. small Peas, -{cooked or canned
some Crackers or Toast

Place Butter in top of double boiler.
Add chopped Onions, boiled Rice,
Tomato Soup, Red Pepper, and Salt.
Cook until Onion is done,
then add the Cream, Shrimp, and Peas.
Reheat, but do not boil.
Stir, and serve on crisp Crackers,
or Toast.

Apple Crisp

1/2 c. Sugar
1 tsp. Baking Powder

1 Egg, -{unbeaten
some Butter
some Cinnamon

Place in a greased 8 X 10 inch baking dish,
the sliced Apples.
Sprinkle with 1/2 c. Sugar.

Mix together with a fork until crumbly,
the sifted Flour, another 1/2 c. Sugar,
Baking Powder, Salt, and Egg.
.
Sprinkle this mixture over the Apples.
Mixture should be crumbly, not doughy.
Dot with Butter, sprinkle with Cinnamon.

Bake for 30 to 40 minutes at 350 F.

Serve warm or cold, with Cream.

Banana Cake

3/4 tsp. Baking Soda

1/4 c. Sour Milk
1 c. Bananas, -{mashed (2 or 3)
1 tsp. Vanilla
1 c. Cream, -{whipped and sweetened)
2 Bananas, -{sliced

Cream Shortening and add Sugar gradually.
Add the well beaten Eggs.
Sift Flour once before measuring.
Sift Flour, Baking Powder, Baking Soda,
and Salt together and add alternately with
the Sour Milk, and Bananas which have been
mashed through a seive.
Add Flavoring.
Pour intogreased and Floured
layer Cake tins,
Bake
.
When layers are cold, put together
with Whipped Cream and Sliced Bananas
for a filling, and spread Whipped Cream
on top of the Cake.
Lay slices of Bananas over the
top of the Whipped Cream on top of Cake.

Bake 30 minutes at 350 F.

Mystery Mocha Cake

1 c. sifted Flour
2 tsp. Baking Powder
1/8 tsp. Salt
1 oz. (1 sq.) Unsweetened Chocolate
2 Tbsp. Butter
1/2 c. Milk
1 tsp. Vanilla
1/2 c. Brown Sugar
1/2 c. White Sugar
4 Tbsp. Cocoa
1 c. cold Coffee, -{double strength

Mix and sift first four ingredients.
Melt Chocolate and Butter together
over hot water;
add to first mixture, blend well.
Combine Milk and Vanilla;
add and mix well.
Pour into a greased pan.
Combine Brown Sugar, White Sugar,
and Cocoa.
Sprinkle over the Batter.
Pour the double strength Coffee over the top.

Bake in moderate oven (350 degrees F.)
for 40 minutes.

Serve warm or cold.

until very soft,
add the Brown Sugar, White Sugar,

Beat until creamy,

Add the chopped Peanuts.
Chill Dough.
Drop portions onto a greased baking sheet,
and press down with a fork dipped in Flour.

Head Cheese

Head Cheese (Pork) is usually made of the
head, ears,and tongue.
Clean the Meat with the utmost care,
and boil both the Meat and Bones in Salted Water
until the former is very tender.
Take out the Head, place it in a colander to drain,
and remove all the Bones with a knife.
Cut the Ears in very thin slices and place
them with the Head Meat.
Season the whole to taste with Salt,
Pepper, Sage, Sweet Marjoram and
any other Herbs that may be available,
also a little Powdered Cloves.
Mix the mass well together,
and pack it tightly in a bowl,
interspersing layers of the mixture with
slices of the boiled tongue.
Press the whole into a compact shape,
and cover it with a plate on which is placed a
sufficiently heavy weight.
The Head Cheese will be ready to use in
two or three days.
it may be cut in thin slices and served with
Vinegar, and Mustard, if liked;
or it may be cut in slices, dipped in
Egg and Cracker Crumbs and fried.

Fig Pudding

1/2 c. Brown Sugar
1/2 c. Stale-Bread Crumbs
1/4 c. Milk
2 Eggs

To the Suet add the Sugar,
Apple, and Figs.
Pour the Milk over the Bread Crumbs,
and add the Yolks of Eggs well beaten.
Combine the mixtures,
add the Flour and Whites of Eggs
that are beaten until stiff.
Turn into a greased pudding mold,
steam in a covered steamer
for 4 hours.

Honey Cake

Stir Sour Cream and Flour together.
Add Ginger, Cinnamon, Sugar, and Honey.
Mix thoroughly.
When the Cake is ready for the oven,
add the Baking Soda, dissolved in a
small quantity of Hot Water.
Beat again for a few minutes,
pour the mixture into a Buttered mould.
Bake in a good oven for 45 minutes.

Green Tomato Soup

3 large Green Tomatoes
1 pt. hot, Soft Water
1 Tbsp. Sugar
1 Tbsp. Butter
1 Tbsp. Flour
some Onion, -{chopped
some Parsley, -{chopped
1 tsp. Salt
1/2 tsp. Pepper

some Green Food Coloring
.
Cook the Tomatoes in Soft Water and Sugar.
Fry the Onion and Parsley
with the Butter for a few minutes,
add the Flour, mixing smoothly,
and turn all into the hot Tomatoes.
Add the Salt & Pepper.
(season to taste)

Let it simmer for 10 minutes.
.
Add a little Green Food Coloring.
(optional)

Boil first 9 ingredients.

1 Lemon Peel, -{grated

they are a light froth,
add the Shredded Almonds,
Lemon Peel, and Spices,
sift in the Flour.
Mix to a stiff Batter,
roll out on a Floured baking board.
Cut into long strips,
Bake until brown.

Mince-Meat

2 1/4 lbs. Round of Beef
2 Qt. chopped Apples
1/2 pt. chopped Suet
1 1/2 pt. Raisins
1 pt. Currants
1/4 lb. Citron
1 Qt. Sugar
1/2 pt. Molasses
3 pt. Cider
2 Tbsp. Salt
4 Tbsp. Cinnamon
1 Tbsp. Allspice
1 Tbsp. Mace
1 tsp. Cloves
4 Nutmegs, -{grated
4 Lemons
.
Put the beef in a small stew pan and
cover with boiling Water.
Cook 3 hours,
having the Water only bubble at
one side of the stew pan.
Take from the fire and let the Meat
cool in the Water, with the cover off the pan.
.
When cold, remove Fat and Gristle,
chop up the Meat rather fine.
Put it in a large bowl with
all the other ingredients, except the Cider,
and mix thoroughly.
.
Now, add the Cider,
and let the mixture stand in a
cold place over night.
.
In the morning turn the Mince-Meat into a
porcelain kettle and beat slowly
to the boiling point;
then simmer gently for an hour.
.
Put the mixture into stone jars and
set away in a cold place;
or it may be put in glass jars and sealed.
It will keep for years in this way.
.
.
When Pies are being made,
1 tumbler Jelly or Marmalade to 3 or 4 Pies
will be found a great improvement.

Wiener Schnitzel (German Recipe)

2 lbs. Veal Steak
1 Egg
2 Tbsp. Butter
1 Tbsp. Lard
1/2 tsp. Capers
6 Anchovies
1 Lemon
.
cut the Veal in slices 1/2 an inch thick,
and 3 inches square;
pare the corners round;
beat lightly to flatten;
season with Salt and dust with Flour;
dip each cutlet in Egg,
then cover with fine Crumbs, and
pat smooth with a knife.
.
15 minutes before serving,
place a pan with the Butter & Lard
over the fire;
as soon as it's hot,
put in the cutlets,
Fry a light brown.
.
Arrange on a warm dish;
lay in the center of each Schnitzel
1/2 tsp. Capers.
Soak the Anchovies in cold water;
remove the skin and bones;
divide in halves, roll them up;
place 2 of these Rolls on each Schnitzel
with 1/4 Lemon cut in two.
Garnish with Water Cress or Parsley,
and serve.

Chocolate Bread Pudding

Pour into a Buttered baking dish,
set in a pan of hot Water,
Bake for 1 hour in a moderate oven;
stir twice during the baking
to keep the Chocolate from rising to the top.

1/2 c. Raisins, -{chopped
1 c. Sugar
1/4 c. Water
1 Tbsp. Butter

Mix all the Filling Ingredients
together thoroughly.
Put Filling in the Crust,
Bake as you normally would a Pie.

Milk Punch

3/4 c. Milk
dash Salt
2 Tbsp. Brandy, or Whiskey
some Nutmeg
some Sugar
.
Sweeten Milk to taste,
add Salt and Liquor,
pour from one tumbler to another until frothy.
Add some Nutmeg,
serve.

Cheese with Red Pepper

2 Tbsp. Butter
4 Tbsp. Red Pepper, -{chopped
1/2 Tbsp. Onion, -{chopped
1/4 c. Grated Cheese
1/4 c. Cream
4 Eggs, -{slightly beaten

Melt the Butter, add the Red Pepper and Onions;
mix into Grated Cheese.
Add the Cream and slightly beaten Eggs.

Cook until well blended.

Serve on Buttered Slices of Toast.
