Cornmeal Mush

From a
1918 Cookbook
~~~~~~~~~~~~~~
1 1/2 c. Cornmeal
2 tsp. Salt
6 c. Water
.
Heat Water to boiling point,
add Salt and the Cornmeal slowly,
stirring while adding.
Boil directly over the fire 10 minutes,
then cook over boiling water from 1 to 3 hours,
or over night.
Half Milk and half Water may be used.

Fried Salt Pork With Milk Gravy

Cut slices of Salt Pork 1/4 inch thick,
fry both sides until the Pork is crisp,
taking care that it does not burn.
Remove to a dish, and place where it will
keep hot until served.
.
Pour the greater part of the Fat from the pan,
allowing about a cooking spoonful to remain.
Stir into this, while hot, 1 1/2 Tbsp. of Flour...
mixed smoothly with 1 pt. of cold Milk,
stir rapidly until thick and smooth,
serve in a Gravy tureen.
When other meat is not on hand or accessible,
this makes the basis of a very comfortable meal.

Chocolate Cookies

1 Egg
3 squares Chocolate
2 c. Flour
2 tsp. Baking Powder
1/2 tsp. Salt
4 Tbsp. Milk

Cream Butter;
add remaining ingredients.
Chill, roll, and shape.
Bake in a moderate oven.

Lady Fingers

6 Eggs
3/4 c. Powdered Sugar
1 c. Flour
1 Lemon Rind, -{grated
1/8 tsp. Salt
more Powdered Sugar

.

Beat Egg Yolks until lemon-colored and thick;
add Powdered Sugar and continue beating.
Add Lemon Rind and the Egg Whites,
beaten to a stiff froth.
Cut and fold in the Flour and Salt.

Shape on buttered sheet,
using Tablespoon or Pastry bag and tube,
4 inches long and 1 inch wide.
Sprinkle thickly with Powdered Sugar.

Bake twelve minutes in a
moderately hot oven.

Sand Cookies

1/2 c. Butter

1 c. Sugar

1/4 tsp. Salt

2 c. Flour

2 tsp. Baking Powder

2 tsp. Cinnamon, mixed with...

4 Tbsp. Sugar

1/2 c. Blanched Almonds, ~ optional.

.

Mix as you would Sugar Cookies;

roll;

shape with Doughnut cutter;

brush with White of Egg;

sprinkle with Cinnamon, Sugar mixture.

Decorate with halves of Almonds.

Bake in a quick oven.

Cabbage Soup

.
1 small Cabbage
2 c. Water
2 c. Milk
3 large slices Onion, -{chopped
4 Tbsp. Butter
1 tsp. Salt
1/8 tsp. Pepper
a few grains Cayenne
2 Tbsp. Flour
.
Chop Cabbage, add Water,
Cook until tender.
Press through a sieve.
.
Melt Butter, add chopped Onion,
Cook slowly for 5 minutes.
.
Add Flour, scalded Milk,
and Cabbage mixture;
Cook for another 5 minutes.

Add seasonings, strain,
and
Serve.

Beet Salad




6 cooked Beets
some Parsley
some French Dressing
4 Hard cooked Eggs

Cut Beets in cubes;
Marinate with French dressing;
let stand for 1 hour.

.Chop the Whites of the Egg until fine;
press Yolks through a sieve.

.Arrange Beets on Salad dish in a mound.

Garnish base of mound with alternating
rows of White and Yolk of Egg, and Parsley.

1/4 c. soft Bread Crumbs
1/2 tsp. Salt
1 c. White Sauce

2 Tbsp. Lemon Juice

Mix Horse-radish, Bread Crumbs,
Salt, Paprika, and White Sauce.
When hot, add Lemon juice and Vinegar.

Italian Potatoes

1 tsp. Onion Juice
1 Tbsp. Parsley, -{finely chopped
1 Egg Yolk, -{well beaten
4 Egg Whites, -{stiffly beaten
1/2 c. grated Cheese

Mix all ingredients together thoroughly.
Pile lightly in baking dish,
Bake until brown.

Oyster Stew

1 Qt. Oysters
1 Qt. Milk
4 Tbsp. Butter
some Salt
some Pepper
4 Tbsp. Cracker Crumbs, ~ (optional)

Drain Oysters from Liquor;
heat liquor to boiling point. Skim.
Scald the Milk in a double boiler;
add Liquor and Oysters to Milk.
Cook until edges of the Oysters shrivel.
Add the Butter, Salt & Pepper.
Serve at once.
.
If Cracker Crumbs are used,
combine the Butter and Cracker Crumbs...
then add to Oyster Mixture.

Note:

Oysters and Oyster Liquor must not be added
to the Milk until just before serving,
as the Mixture is apt to curdle if
the Oysters are allowed to stand in the Milk.

E-Z Mother's Day Delight cake

1 box yellow Cake mix
1 large can crushed Pineapple
1/4 c. Sugar
1 pkg. instant Vanilla Pudding
1 carton Cool Whip
.
Bake yellow Cake mix as directed,
then poke with holes.
Boil the Pineapple with the Sugar for 2 minutes.
Let cool for at least 6 or 7 minutes.
Pour over warm Cake & refrigerate.
.
Mix the instant Vanilla Pudding,
and pour over cold Cake.
Spread the Cool Whip over top.

Keep Refrigerated

Cucumber Soup

Cucumber Soup has a peculiar appetizing flavor of it's own.
It might be given a green tint by the addition of Food coloring.
Also, a few spoons of Whipped Cream over the top would be
especially appropriate for a green and white luncheon.

3 c. Cucumbers, -{sliced
4 c. Chicken Stock
1 large slice Onion
1/4 c. Butter
1/4 c. Flour
some Salt
some Pepper
1 pt. Milk

.
Pare Cucumbers by taking off the ends,
which may be bitter.
Cut into slices and then
parboil the Cucumbers for 10 minutes.
Drain and add to Chicken Stock with a slice of Onion.
Cook until soft.
Rub through a sieve and thicken with
Butter and Flour rubbed together.
Season with Salt & Pepper,
then add hot Milk.
Strain and serve.

Pickled Peaches

1 Bushel sound Peaches
2 gal. Vinegar
10 lbs. Brown Sugar
some whole Cloves
.
Take sound Peaches,
remove the down.
Make Vinegar very hot,
add to it the Brown Sugar,
boil and skim it well.
Stick 5 or 6 Cloves into each Peach.
Then Pour the boiling Vinegar over them.
Cover them over and set them in
a cold place for 2 weeks.
.
After 2 weeks,
drain off the Vinegar,
make it hot, skim it,
and again pour it over the Peaches.
Let them become cold,
then put them into glass jars,
secure them as for Preserves,
pour the hot Vinegar over them.

Creamed Dried Beef # 2

1 c. Dried Beef, -{shredded

Do Not add Salt.

Into 1 c. boiling Milk,
stir until thick and free from lumps,
the Flour mixed smoothly
with the Butter.
Turn the Dried Beef into the hot Cream,
stirring until thoroughly mixed and heated.

Serve by itself or on slices of Toast.
