Turtle Ragout

From a
1946

1 Onion, {chopped
2 Tbsp. Butter
1 Tbsp. Flour
1 Bay Leaf
1 Garlic Clove
1 c. Water
2 lbs. Turtle Meat, {diced
1/4 c. Sherry
.
Cook Onion in Butter;
blend in Flour.
Add all remaining ingredients,
simmer for 30 minutes.
Serves 6
