Surprise Muffins

1928
cook book

2 c. Flour, or
................ {1 c. Flour & 1c. Graham Flour, or
................ {1 c. Flour & 1 c. Corn Meal
3 tsp. Baking Powder
1 Tbsp. Sugar
1/2 tsp. Salt
1 c. Milk
2 Eggs
2 Tbsp. Shortening, {melted
.
Sift together the
Flour,
Baking Powder,
Sugar,
and Salt;
add the
Milk,
well-beaten Eggs,
and melted Shortening;
mix well.
Put 1 Tbsp. of Batter into each greased Muffin tin.
Drop into the center of each one,
1 tsp. Currant,
or 1 tsp. Apple, or other Jelly;
or 1 Date;
or other Fruit.
Add another Tbsp. of Batter
and bake in hot oven at 425 F.
for 20 to 25 minutes.
