Layered Mint Chocolate Fudge

12 oz. pkg. Semi-sweet Chocolate Chips
14 oz. can Eagle Brand Sweetened Condensed Milk...
~ (NOT Evaporated Milk)
2 tsp. Vanilla extract
1 c. White Confectioner's Deluxe Baking Pieces *
1 Tbsp. Peppermint extract
1 drop Green Food Coloring, -{optional

In heavy saucepan, over low heat...
melt Chips with 1 c. Sweetened Condensed Milk;
add Vanilla.
Spread 1/2 the mixture into a
wax paper-lined 8 or 9 inch square pan;
chill 10 minutes, or until firm.
Hold remaining chocolate mixture at
room temperature.

In heavy saucepan, over low heat...
melt White Baking Pieces with the remaining
Sweetened Condensed Milk...
(mixture will be thick).
Add Peppermint extract & Food Coloring.
Spread on chilled Chocolate layer;
chill 10 minutes longer, or until firm.

Spread the reserved Chocolate mixture
over the Mint layer.
Chill for 2 hours, or until firm.

* Or 6 oz. White Confectioner's Coating may be used.
