Venison (Kentucky Recipe)

Deer Hunters Special

Take a haunch of venison, put in a large kettle,
cover with boiling water, and boil until tender;
drain off all the water, and put 1/2 lb. Butter...
with Salt & Pepper in the kettle.
Set over a moderate fire, and let brown, first on one side,
then on the other.

Venison cooked in this way retains it's natural flavor,
and will be found very delicious.
