Water Melon Pickles

Peel off the green rind,
cut into pieces and let lie all night in Salt Water.

Next morning;

Drain, and boil in a Clear Water until tender.

Drain well.

Make a Syrup of...
3 lbs. Sugar to 1 Qt. Vinegar;
boil and skim,
spice to taste;
add the Fruit and boil until it is transparent.
