Lemon Cookies

From:
Betty Crocker
1 pkg. Betty Crocker Super Moist lemon cake mix
1/3 c. Shortening
1/3 c. Butter ~ (or margarine), softened
1 Egg
1 tub Betty Crocker Whipped, or Rich & creamy
lemon ready-to-spread frosting
Heat oven to 375
Stir about 1/2 of the Cake Mix (dry),
in with the Shortening, Butter, & Egg ...
in medium sized bowl, until well mixed.
Then stir in the remaining Cake Mix.
Drop dough by rounded teaspoons full,
about 2 inches apart onto ungreased cookie sheet.
Bake for 10 to 12 minutes,
or until light brown around edges.
Let cool for 1 minute; remove from cookie sheet;
let cool completely.
Frost with Lemon Frosting.

If rolled cookies are preferred:
Divide dough into 4 equal parts;
roll each part about 1/8 inch thick,
on lightly floured surface with a
cloth covered rolling pin.
Cut into desired shapes.
Place on ungreased cookie sheet.
Bake for 6 to 8 minutes,
or until light brown around edges.
Do not over bake!
