Tomatoes for Pies

In the Autumn, take the large sort that will not ripen before frost.
Pare them, and for every 8 lbs. of Tomatoes....
allow 3 lbs. of Sugar,
and 1/2 pint of Molasses.
Boil slowly for 3 or 4 hours.
Can this in jars.
this makes an excellent pie in the Winter.
When you use it,
make a bottom Crust,
fill the pie crust with this filling,
with a few slices of lemon on top;
if it seems to be to thick, add a little Water.
Put on a top Crust &
Bake until golden brown.
