Orange Meringue Pie

Line the Pie Pan with a pie dough rolled very thin,
set aside in a cool place.
Filling
Beat:
1 teacupful = (4 fluid oz.) ~ or 113 Grams.
1 teacupful of Sugar
the rind & juice of 1 Orange
3 Egg Yolks
1 Tbsp. Flour
pinch of Salt;
then...
beat the Egg Whites to a stiff froth,
and stir into the Sugar & Orange mixture, & 2 Tbsp. Milk.
Before pouring in the mixture,
brush the Crust with the Whites of 1 Egg.
Fill the pan with this mixture.
Bake in a moderate oven
for 45 minutes.
As soon as it's done,
cover the top with Meringue.
Thorough beating of the mixture and slow baking are absolutely necessary to success.
