Twice Baked Potatoes

Bake Potatoes until fully baked.
Let Potatoes cool completely.
Cut Potatoes in 1/2 the long way,
carefully scoop out as much Potato as possible & into a bowl.
(saving the Potato skins and setting them aside).
Add a generous amount of real Butter to the Potatoes ~
(about 1/4 pound for every 6 Potatoes).
Add some sour cream, chives, & a little salt & pepper and
a hand full of shredded Mozzarella cheese.....
then mash it all together.
Spoon the mashed mixture back into the potato skins,
place them into a cake pan,and
top with more Mozzarella cheese.
Bake at 300 for 30 minutes.
