Chicken & Cheese Sandwich Supper

2 (5 oz.) cans Chunk White Chicken
1 c. coarsely chopped Raw Spinach
1 c. shredded Sharp Cheddar Cheese ~ divided
2 English Muffins... split & toasted
4 thin slices of Onion
2 Tbsp. Cream ~ or Milk
1 Egg ~ beaten
1/2 tsp. Prepared Mustard
Drain Chicken, reserving the Broth.
Mix Chicken, Spinach & 1/4 c. Cheese.
Top each Muffin 1/2 with a slice of Onion;
then each with 1/4 Chicken Mixture.
Blend reserved broth with Cream ~ (Milk),
remaining Cheese, Egg, & Mustard.
Spoon over Chicken mixture.
Bake at 450 for about 5 minutes,
or until heated through.
Serve at once!
Makes 4 open - faced Sandwiches.
