Graham Cracker Prune Pudding

Billie Johnson's

1 c. Snipped Prunes
Some Chopped Walnuts ~ (optional)
1/4 c. Shortening
1/3 c. Sugar
1 tsp. Vanilla
1 Egg Yolk
2 c. Fine Graham Cracker crumbs
1 tsp. Baking Powder
1/4 tsp. Salt
2/3 c. Milk
1 Egg White ~ Beaten stiff

Cover Prunes with boiling water; let stand until cool, then drain.

In small mixing bowl, cream together Shortening, Sugar, & Vanilla,
add Egg Yolk... beating well.
Stir in strained Prunes & Walnuts.

Mix together... Crumbs, Baking Powder, & Salt.
Add to creamed mixture alternately with Milk.
Fold in Egg Whites.

Fill greased custard cups. Bake at 350 for 30 minutes.

Serve warm, with Whipped Cream. Makes 6 servings.
