Zucchini & Macaroni Bake

  • 3 Medium sized Zucchini ~ sliced
  • 1/4 c. Butter
  • 1/4 c. Flour
  • 1/2 tsp. Salt
  • 1/2 tsp. Oregano
  • 1/4 tsp. Garlic Powder
  • 2 c. Milk
  • 2 c. Shredded Cheddar Cheese ~ (8 oz.)
  • 2 c. Macaroni ~ cooked ~ drained
  • 3 Tomatoes ~ sliced
Saute Zucchini in Butter. Blend in.... Flour, Oregano, Garlic Powder, & Salt. Gradually add Milk ~ stirring constantly, until thickened. Add only 1 1/2 c. Cheese ~ stir until melted. Stir in Macaroni & Tomatoes. Pour into a 1 1/2 Qt. casserole dish. Bake at 350 for 25 minutes. Top with remaining Cheese, continue baking until Cheese melts.
