Strawberry Tapioca

Soak a large teacupful of Tapioca in cold water over night.

In the morning, put 1/2 of it in an earthenware baking dish.
Sprinkle Sugar over the Tapioca; on this, put 1 Qt. of Strawberries,
more Sugar, and the rest of the Tapioca.
Fill the dish with water, which should cover the Tapioca about
1/4 of an inch. Bake in a moderately hot oven until it looks clear.

Eat cold, with cream or custard. If not sweet enough, add more
Sugar at the table, and in baking,if it seems too dry, more water
is needed.


NOTE:

A similar dish may be made by using sliced Peaches.
