Pumpkin Bars

Bars
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 15 oz. can pumpkin
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
Mix egg, vegetable oil, sugar, and pumpkin in a large bowl. Then sift in the rest of the ingredients and mix well. Pour onto a greased and floured 12 by 18 inch pan. Bake at 350 for 25 to 30 minutes.

Frosting
  • 6 oz. cream cheese
  • 3/4 stick of butter
  • 1 Tbsp cream (milk will do)
  • 1 tsp vanilla
  • 4 cups powdered sugar
Beat cream cheese, butter, vanilla, and cream together until soft. Add powdered sugar until correct consistency for spreading. Cut into bars. (These can be frozen.)
